  • Green beans is kind of the only green veggie DH will eat which is why its on the menu so much...

    Sun: Lasagna, caesar salad, garlic bread

    Mon: Pork BBQ sandwiches, tater tots, green beans

    Tue: Normally my night out so I don't cook, but we ended up both being home so I got Subway for us

    Wed: Balsamic chicken, wild rice, green beans

    Thr: Normally DH's bowling night but he's sick and I have no dinner planned so I'm going to pick something up on the way home. No idea what...

    Fri: Meatloaf, mac & cheese, green beans

    Sat: Dinner out for SIL's bday

  • Ours this week has been really bad.

    Wednesday: Went to the Greene Turtle for a fundraiser dinner

    Tonight: Boboli pizzas

    Friday: Probably carry out since I get home late on Fridays.

    Sunday: Probably carry out since we'll be working on the house.

  • I went easy this week since last week was so hectic I needed a week to "recover".

    Mon: Leftovers from B's Baptism party (lunch meat, meatballs, etc)

    Tues: Paprika Rubbed Chicken with avocado/red onion/lime salsa and a side of veggies

    Wed: TJs Shepherd's Pie with veggies

    Thurs: Homemade Creamy Tomato Soup and grilled chese

    Fri: BBQ Chicken Pizza

    Sat: Terriyaki Salmon, Rice and Veggies

    Sun: Turkey Chilli

    I LOVE the Chicken Broccoli Braid from PC, and I usually hate those canned crescent rolls.

    I also love their Cherry Cream Cheese Ring, another stoneware+crescent rolls delight.

    For us - beef stroganoff tonight  , leftovers tomorrow - and next week  I plan to try some new recipes -

    Easy Parmesan Chicken bake

    Ingredients

    • 4 boneless skinless chicken breasts
    • ? cup olive oil
    • 4 tsp garlic, diced (about 8 cloves)
    • ? cup parmesan cheese
    • ? cup Italian style breadcrumbs

    Instructions

    1. Preheat your oven to 425?F
    2. Mix together the olive oil and garlic in one dish, and the parmesan cheese and breadcrumbs in a second dish. Roll the chicken in the oil mixture, and then in the breadcrumbs, ensuring that it is well coated each time.
    3. Place chicken breasts on a wire rack set on top of a rimmed baking sheet. Bake for 35 minutes, until the chicken reaches 180?F.

      and the skillet lasagna( can all be cooked in 1 skillet !!! SCORE

    • 1lb ground beef
    • 1lb ground pork
    • ? tbsp Italian seasoning
    • salt
    • pepper
    • ? tsp garlic powder
    • ? tsp onion powder
    • 1 tsp Worcestershire sauce
    • ? tsp hot sauce
    • 1 (28oz) can diced tomatoes
    • water
    • 1 tbsp olive oil
    • 1 medium onion, diced
    • 4 garlic cloves, minced
    • ? tsp crushed red pepper flakes
    • 13 curly-edged lasagna noodles, broken into pieces (not the oven ready ones)
    • 1 can tomato sauce
    • ? cup grated Parmesan cheese
    • ? cup grated mozzarella cheese
    • 1 cup ricotta cheese

    Instructions

    1. Mix together the ground beef, ground pork, Italian seasoning, garlic powder, onion powder, Worcestershire sauce, hot sauce, and salt and pepper (to taste). Set aside. Empty the canned, diced tomatoes into a 4 cup measuring cup, and top with water until you reach the 4 cup mark.
    2. In a large skillet, heat oil over medium heat until simmering. Add the onion, and a generous pinch of salt, and cook until the onion softens and just begins to brown (about 5 minutes). Stir in the garlic and red pepper flakes and cook until becoming fragrant, about 30 seconds. Add in the meat mixture and cook, breaking apart, until browned (about 5 minutes)
    3. Break the lasagna noodles into roughly 2" pieces and cover the meat with them, but do not stir. Pour the diced tomato mixture and the tomato sauce over the noodles, cover, and bring to a simmer. Reduce the heat to medium-low and, stirring occasionally, cook until the pasta is tender, about 20 minutes.
    4. Remove the skillet from the heat and stir in ? c Parmesan cheese, mozzarella cheese, salt and pepper to taste. Top with heaping spoonfuls of ricotta cheese and serve, sprinkling additional Parmesan cheese over is desired.

    I adore the canned crescent rolls! I think everything is better if its made with crescent rolls. I will have to try the cherry cream cheese ring - thanks for the suggestion. 

    IDHT - this is the recipe I work off of but I use pre-made turkey meatballs (cause its easier) and the recipe says dont use low fat or light mayo, but I use both light mayo and 1/3 less fat cream cheese and its still delicious. I also add cooked spinach to it because I try to add green veggies when I can.

    we are having meatloaf tonight with butternut squash ravioli (maybe mashed potatoes instead)
