general cooking question

how do you get the acidy taste out of tomatoes?

growing up, my mom used to make lots of tomato based soups using tomato sauce from a can. i've tried to mimic it myself, but it's always too sour still. i've tried sugar, i've tried salt.....which one is it? or is there another secret?

i'd ask my mom, but i always feel the urge to make this tomato soup when she's vacationing in asia, so i can never ask her!

    That's my only idea.....I know a lot of recipes with tomato bases call for sugar...Sorry, wish I could be more help

  • Can you add some milk or cream? Just a tiny bit.
  • Lemon Juice (Real Lemon) is always what my mom adds when she makes her own Tomato Sauce's. You don't need much...

    ETA: by little I mean I really wouldn't add more than 1/2 tsp and then see what happens.. you might even start with a 1/4. Sorry I don't have exact measurements, but like I said give it a try.

  • Baking soda is a base. Adding in a little bit at a time, stirring it in and then tasting might help, but you can't add a lot. Maybe 1/8 tsp at most. You don't want to taste the baking soda.

  • Not sure what else is in the recipe, but I go with either brown sugar or worcestershire sauce, depending on what else is going in the soup.

    1st year anniversary in Victoria with a killer whale topiary!

    Brown sugar is my advice, too.  Just a smidgen.

  • I agree with adding a bit of sugar/brown sugar, but also maybe try cooking it for a while?
