Need dinner opinions

We're having another couple over for dinner tonight. DH requested that I make spaghetti and meatballs, so that's the plan, but I was also thinking about making alfredo sauce with italian sausage, so they can choose which sauce they want (or have both). What do you think? I'm just worried about making way too much food and having it go to waste. Would you make both sauces for only 4 people?

Re: Need dinner opinions

  • I don't think I would take the time to make both for only 4 people. I don't really enjoying cooking though, so I wouldn't do more work than I had to. I would also think that more people would like marinara sauce than alfredo sauce.

  • I would just do the meatballs and marinara.  I don't think the sausage and alfredo would be as popular and would probably go to waste.  If you are wanting to make something else, I would do a salad (maybe with a homemade vinaigrette), bruschetta, or caprese salad/skewers.

  • I probably would but that's because I usually go over the top on things, plus pasta freezes well so if I had left overs I'd just freeze them (including the sauce).

Really??   I always thought it would turn mushy.  I'll have to try that!

It's definitely not al dente but not mushy either.
