Meal Planning

Anyone do weekly meal planning??  I feel like it's been talked about here, but maybe not?

Anyway, I'm making my list and I'm lost for ideas.  I need fast and easy meals that are kid friendly (picky-kid friendly/picky-husband friendly).

Any ideas?

*Can not require a grill- we moved it already :)

  • I try to meal plan, it's usually based on what meat is on sale at the grocery store.  Here's my meal plan for this week.

    Monday- I eat dinner out on Monday nights after WW

    Tuesday- Parmesan turkey cutlets

    Wednesday- Pork loin in the crockpot

    Thursday- Tacos

    Friday- Pork chops

    Sides will be rice, baked potato, roasted potatos depending on what sounds good that day and I'll make a vegetable each night.

    DH is a VERY picky eater, it's quite annoying actually.  Last night I made a chicken recipe that I thought was absolutely delicious and he didn't like it at all.  He's a very basic eater so cooking for him could be very easy but I like to try different stuff and I just get annoyed that he doesn't like what I like Wink

  • I meal plan every week.  We have a lot of favorites that get repeated every week or two. 

    I like: Tacos (with fresh lettuce, tomatoes, onions, cheese, sour cream, beans, homemade guacamole)  It's a super healthy meal and everyone can put exactly what they want on their taco.

    Spaghetti: I usually brown up some ground turkey, add canned pasta sauce, then spice it up a bit with my own seasonings (usually garlic powder, onion powder, parsley, some red pepper flakes if you like heat, oregano, or any old "italian seasoning" mix)

    Pork chops: I usually just season them with salt, pepper, onion powder, garlic powder or whatever is on hand and cook them in a pan with a touch of olive oil.  If I have fresh apples on hand, I'll usually make some homemade apple sauce, and throw a little bit of apple cider into the pork chop pan to give them a bit of an apple flavor...

    We also really like breafast for dinner: Pancakes, Waffles (my favorite!), eggs, bacon, sausage, fruit salad, ect... we'll usually pick a carb, a protein and add fruit or veggies if we can find a way (usually veggies in omlets or something like that)

    We also use chicken a lot... You can do a lot with baked chicken.  I usually keep a box of shake and bake around.  That is a really healthy way to cook up chicken.  I usually add a veggie and call it good. 

    If I think of anything else, I'll post it, but this is a pretty good list to start with!  I hope it helps!

  • I try to have a rough idea for the week. It doesn't always go according to plan though. :)We have a lot going on, so we are trying to make easy stuff this week.

    This week I made some white chicken chili in the crockpot. DH loves it with tortilla chips.  We will also probably make a homeade pizza & either french dips or some beef stroganoff sandwhiches. Which sounds odd, but it's good. The receipe is here:

  • I am doing my meal planning this morning, I usually do it on Sundays but yesterday was a crazy day and I didn't have time.  This is something I just started doing and I love it.

    Monday: Tacos ( this is a regular at our house, once a week if not twice)
    Tuesday: Out to dinner (Nephews Bday)
    Wednesday: Spaghetti with Turkey Meatballs
    Thursday: Chicken/Broccoli and rice in the crockpot-
    1 can of Cream of Broccoli soup
    1 can of broccoli cheese soup 
    3 chicken breast
    Throw the frozen chicken breast in the crockpot with the cans of soup and let cook all day, when I get home I start the rice on the stove and put a bag of frozen broccoli in the crockpot. Once the rice is done just serve the chicken and sauce over the rice.

    I love using my crockpot it really helps during the week.
     
    Some of the other meals I do are, Chicken fajitas, the famous taco bake from another nestie, chicken fingers and mashed potatoes, turkey burgers and sweet potato fries, and I just made stuff green peppers in the crockpot last week. That is another one that I will make again soon!

  • I try to make a meal plan, and we are usually pretty good about it.  I actually have a list of dinner ideas on the fridge that I frequently resort to, which include:

    • tacos
    • chicken quesadillas
    • chicken enchiladas
    • chicken taco burgers (from Rachel Ray, this if FI's favorite and so easy)
    • spaghetti
    • bbq chicken (grilled)
    • steaks (grilled)
    • sausages (purchased from Hollywood Market, with polenta)
    • baked chicken (purchased cooked from grocery store, with stuffing)
    • cajun chicken pasta (FI's dish)
    • cheesy spaghetti bake (also FI's dish)
    • mac and cheese and ham steaks
    • stir fry (using frozen veggies from Costco and purchased sauce)
    • breakfast (this is only ocassionally as I usually cook breakfast at least once per weekend)
    • chicken with pesto, tomato pasta (purchased pesto from store, with added baked grape/cherry tomatos [til they start to explode])
    • chili (seasonal)
    • white chicken chili (seasonal)
    • pot roast (I just buy a roast, put it in the crockpot with french onion soup mix, add cut of red skinned potatos and maybe baby carrots)
    • chicken parmesan (with purchased marinara sauce)
    • chicken piccata
    • Aretha Franklin's chicken (a recipe from Martha's Stewart's website, served with rice pilaf)

    That's all I can think of right now. As you can see, supplement my homemade meals with a lot of premade sauces, etc.  It just helps cut down the time.  I don't profess to be a chef or a really healthy cook, but I try my best and generally get the job done.
