This is for tailgating this Saturday and I need to get group approval tonight. I hesitate to say it's tailgating bc we do it so differently here than the rest of the country and I don't want you guys going, "where are the chili and brats?" We do it on the quad and there's no electricity and no grilling, so it's essentially like a picnic. The only thing we have is coolers and whatever we bring needs to live in the coolers for up to 12 hours safely.
There'll be ~20 adults: 15 men, 5 women.
Kick-off's at 11, so we'll tailgate for about 90 minutes beforehand.

The game will end around 3:30/4:00 and I expect people will stick around til 7 or 8 pm. (Yes, this will be 12 hours of tailgating...exhausting as a hostess! I did every home game last season, but I burnt myself out so badly this is my first - and only - of this season lol.)
Wheat Thins with cream cheese & pepper sauce (being brought, not my first choice for an out of doors app)
Catfish pate with crackers (also being brought)
TBD protein (I am thankfully not paying for this, only coordinating it, so the people paying need to decide among pricey catered chicken tenders, cheap baked ham with rolls, or medium-cost deli sandwich wraps)
Carrots & celery with ranch
Cowboy caviar with tortilla chips
6's apple cake
Brownies
Cookies
I'm concerned about the dinner, not so much with the brunch. People will have been eating crap stadium food, so I want there to be a real, square meal there, but I want to cover the snacky options, too. Should I make chex mix?

First what are sausage biscuits? If there is a significant amount of protien I'd call breakfast good. If it's just a little bit, I'd say you need some devil eggs or something. It's a lot of sweet (breads and fruit) otherwise.
Are you okay with the mayo in a cooler for 12 hrs? I don't know your outside temps, but I could see it being a concern. For that reason alone I'd consider swapping out a vinagrette based pasta salald for the broccoli one. You can still load that up with veggies. Otheerwise I think it sounds good (especially the apple cake). Chex mix would be a good add on. If you don't want to make it, maybe just get a jar of mixed nuts.
Sausage biscuits are just the patty on the biscuit. I do have a different recipe where you mix the sausage crumbles in with the dough, but that's too complicated for this week. I could swap a sweet bread for cornbread or pumpkin bread?
Dang.it. I knew there was a reason it was unusually easy to find a side - mayo. Saturday's supposed to be 40 and 69, and we're in the shade, so I think the dish would be ok. I have vinegar-based salads, but this one just looked really good.
I saw a Planters display yesterday of "tailgating nuts" - that's really what it said on the can - so that's a good option.

Sausage on a patty would be just fine. I just know fruit and breads for breakfast don't cut it for a lot of people.
Get the nuts. If for no other reason than it sounds funny. How are they different?

I think it looks good for the event you described. I might add something else savory to the brunch menu but you know your crowd and what they are used to.
I'd add another starch to the dinner menu, especially if folks choose the chicken tenders. I know my friends would need something to soak up the beer and I'm usually craving some carbs by the end of a game. Maybe cornbread or biscuits if you pick the chicken, maybe roasted potato salad with a vinaigrette (no mayo) or a couscous salad if you pick the ham (which is what I would pick!)

I've made this no-mayo pasta salad before and it was a tailgate hit! It's pretty hearty- I omitted avocado, only because I don't like it.

Yeah, everything I can think of would need either eggs or cheese which can get gross if not served immediately. But I love this idea--even smoked salmon with little mini toasts would be fine and would add a little more protein.
