I feel like I need to change up my side dishes and explore some forgotten vegetables.
What are your favorites?

We eat a lot of broccoli b/c it's one of the few veggies we both like. I love asparagus but I haven't mastered cooking it myself.
I need to learn how to cook eggplant. I hate it but H will eat it so I bought one this weekend. I have no clue what to do with it.
I like to do canned green beans or corn.
Fresh, I like a lot, but most commonly, I do: broccoli, carrots, green beans, side salad. I love grilled or roasted squash. DH is not a fan, so I rarely do it.
Frozen: Edamame, broccoli. I'm picky about frozen veggies.
Broccoli (usually boiled, fresh or frozen)
Squash, Zucchini (sauted or oven roasted, stuffed zucchini)
Asparagus (oven roasted),
Onions, Bell Peppers (sauted, carmelized, oven roasted)
Spinach, Cabbage (cooked or raw in a salad)
Turnips (cooked and mashed like potatoes)
Artichoke (we've only tried this a few times but it was good)

Creamy Pearl Onions - Take a bag of frozen pearl onions, cover in broth and simmer for 45ish minutes until almost all the liquid is gone. Add a (generous) splash of cream and let that simmer down for a few minutes before serving. It's delicious!
