Need Brunch Menu Help

We have a huge brunch planned for Sunday for a friend who is moving to Chicago.  We are expecting about 30 people.  I just returned from my father's funeral on Monday night.  We still want to host it.  Normally, I would take Friday off of work and start baking/cooking.  Saturday is not an option b/c there are multiple parties for this friend.

So, I need to adjust my menu.  Here is what I am thinking:

Bacon

Turkey Sausage

Waffle station

Fruit Salad

Chicago-style Deep Dish Pizza

Cheddar Bay-esqe biscuits (she loves da Lobsta!)

Fruit Juices/Soda

Honeycrisp Apple Sangria

Cheesecake squares

 

I think I have the basics covered.  Any suggestions?

  • I would do another dessert option.  If it were me, i'd pick up a box of mini elcairs from the frozen section.  Those are my favorite.  Or something else frozen, bite size and just needs to be put on a platter.

    It sounds great!

  • I would add a quick green salad, the main dishes are kind of heavy and some folks might like something lighter to cut it. I like how the menu incorporates where she is going and where she is leaving from.

    I agree.  A green salad with maybe a citrus-y vinagrette.

  • i posted something similar a few days ago! (doing a waffle station too...will be interesting to know how yours goes).

     i think i am adding a spinach based salad with mandarin oranges to mine...although i still have some time.
