Chicken?

I've got one more meal to plan for next week. I'm drawing a blank though! So what's your favorite chicken dish that doesn't take too long to make?

  • Do you have a crock pot?

    Give an Italian treatment to chicken with this easy slow cooker recipie.  A zesty tomato sauce that is great over spaghetti or any pasta.  This easy crock pot recipe is great for company because it gives you more time to spend with guests.  Toss a green salad, throw some rolls in the oven and you are ready to eat!


    4 boneless skinless chicken breast halves (about 1-1/2 pounds)
    2 tablespoons canola oil (or any cooking oil you have on hand)
    1 jar (26 ounces) of your favorite spaghetti sauce
    1 medium onion, peeled and chopped
    2 cans (4 ounces each) sliced mushrooms, drained
    1/2 teaspoon garlic powder


    In a skillet, brown chicken in oil on both sides.  Transfer to your crock pot.  In a bowl, combine the remaining ingredients; pour over the chicken.  Cover and cook on low for 4 - 5 hours or until chicken juices run clear.  Serve with hot cooked spaghetti or pasta of your choice.

    If not, I bet you could cook it in a pan on the stove until the chicken is done.

    Holiday Vacation
  • Sauteed with whatever vegetables I have lying around, and served in a wrap or on top of couscous/rice/quinoa/pasta/whatever carb I have lying around. ;)

  • Love chicken, so versatile.

    I love these three:

    1. marinate the chicken in lemon juice, onions, garlic and saffron, then bake in the marinade in the oven, serve with basmati rice and grilled tomatoes (I put the tomatoes in the oven with the chicken for the last 10 mins or so).

    2. marinate in soy sauce, honey, garlic and ginger, then bake in the marinade in the oven, serve with rice. I like to serve the "sauce" on the rice too.

    3. marinate in ginger, garlic, onions, turmeric, chilli powder, garam masala, tamarind paste, lemon juice, then bake in the marinade in the oven, serve with rice.

  • Grilled apricot chicken, jasmine rice and sauteed veg. I usually serve a warm asparagus salad with it.

  • Chicken in a creamy mushroom sauce.

    It's what I usually make when I don't have much time. It's super easy and quick and you can pretty much make it however you want.
