Lunch ideas?

I'm trying to find alternatives for sandwiches. So far I've made black bean soup and butternut squash soup. I'm probably going to make some sort of chili for next week. Any good ideas for lunch type meals? I've been looking for a good recipe for a quinoa salad but haven't found one that looks good enough to try out.

  • I'm really boring. I usually do salad or leftover pizza. I even bring leftover dinner too. Tomorrow I'll most likely bring baked ziti.

  • I don't have any ideas, either, as I usually just eat leftovers from dinner the night before.

  • I usually have a lean cuisine or leftovers.  I've never done quinoa salad, I usually make a heated version.  My favorite is to just do a pilaf with chopped onion, green and red peppers, and mushrooms, add quinoa and veg stock, then stir in chopped tomatoes and parm cheese at the end.

    Salad is pretty easy to take for lunch too.  Don't really have other ideas!

  • I almost always have a soup and a half sandwich or salad.  Sometimes I have chicken w/broccoli & a sweet potato.  Random I know.

  • I make quinoa salad. I use fat free feta, grape tomatoes (halved), cucumber(quartered cubes), and parsley. I dress it in homemade balsamic vinegar dressing (balsamic vinegar, evoo, pepper, garlic). Super easy!

  • I typically have leftovers, too. On days when I don't, though, like today, I just make a sandwich. I had a thin chicken breast on whole wheat with light ranch, swiss cheese, lettuce, and pickles. I also brought baby carrots, celery sticks with peanut butter, a banana, and a granola bar.
