need meatloaf advice!

It doesn't seem to matter what quality of beef I buy... every time I've made meatloaf lately, I've had to pour off SO much grease when it's done cooking.  Am I doing something wrong?

  • My advice is to not eat meatloaf:) I hate it, that's why:)

    But, are you using a pan with an insert? Those are really great for meatloaf--just like a roaster pan that you would use for a turkey, but for meatloaf. You can make your own with an oven safe cooling rack and pan.

  • I use lean ground turkey. Add in shredded carrot, seasonings, egg, bread crumbs. Bake in muffin tin
  • I'd try either ground sirloin or 94/6 (or whatever that "Hey eat me, I'm not as fatty as the other guys!" ground beef is).

    Speaking of meatloaf, I *love* the stuff, but I can't get my hubby to even try it.  Sadface!

  • I usually get 93/7 ground beef and there's no grease at all. I have a meatloaf pan that I don't even usually use.

    I've also made it with ground turkey too.

  • I don't even use a loaf pan - just form into a loaf and bake on a sheet pan. That way if there is a lot of grease the meatloaf isn't sitting in it and I can pour off. Grew up with meatloaf this way and now DH thinks it's weird Smile

  • DH LOOOOVES meatloaf.  Seriously loves.

    But, I have not tried a pan with a liner, or baking in a dish in loaf form, instead of a loaf pan.  I will try that!

     I have not even seen 93/7 beef in my local store.  I always buy at least 85/15 but now I am going to look again!

    ANd we don't like meatloaf with ground  turkey as much, though we do use ground turkey for some things.  Except for my pregnancy weaknesses (which are many lately... silly holiday foods!), we try to stick to a primal/gluten free diet so we want the good beef and some of the fat.

    I'm pretty sure you and I are destined to be besties.  We'll eat meatloaf and cook desserts while b!tching about crappy job situations- ha!

    The other areas of the sheet pan. Normally there isn't a whole lot, but it looks like a TON when it's cooped up inside a loaf pan. I haven't compared to one of the lift loaf pans since I don't have one, but I think it works pretty well.
