I've made it with ground beef and ground turkey, and it tastes delicious either way.
I've made this at least a dozen times. My stomach is growling just thinking about it.

ErinG gave me this. It was a hit. I used canned diced tomato already seasoned with chili powder. I threw the onions in first, beans, broke up the raw seasoned beef to spread out in the pot, tomatoes on top and cooked in the crockpot on low for 8 hours.
1lb ground beef or turkey2 cans kidney beans1 can cannelini beans1 can black beans1 large onionlittle bit of minced garlic1 can tomato sauce (regular size)1 large can diced tomatoeschipotle chili powder, regular chili powder and cumin, some salt and pepper to taste
Disclaimer: I don't measure anything.
90/10 ground beef or turkey - i usually brown/drain it first (i use around 1 pound for the 2 of us)
diced green peppers, garlic , mushrooms and onions - sauteed with a little evoo, chili powder, cumin
1-2 cans beans of your choice, drained and rinsed
1 can fire-roasted diced tomatoes and juice (Hunt's makes these)
1 8oz can tomato sauce
more chili powder, cumin, salt/pepper
1 chipotle pepper in adobo, minced (I buy a can of these and keep them frozen in a ziploc to used as needed)
combine everything in the crockpot and add a tablespoon or two of flour to thicken everything. cook on low for 6-8 hours.
