I went grocery shopping yesterday on an empty stomach. Bad Idea. Well I bought some avocados they were on sale. When I got home I realized I bought them but besides guacamole or just eating them I don't really have anything to do with them.
I've got some tuna steaks to cook tonight does anyone have any ideas on what I can do with these avocados.

Mmmmmm, avocados. I love those things.
I like to mash one up and use it as a spread on sandwiches. It's especially good on a toasted English muffin w/ a fried egg and maybe some pealmeal/Canadian bacon.
Diced in a "salad" with diced fresh tomatoes (4 small), a can of tuna, a can of black beans and some balsamic vinegar makes a good lunch for a few days.
Sliced and put on top of anything.
I bough a bag of rather green ones on Sunday and I can't wait for them to ripen. It seems like anytime I want avocados all I can find are green ones of way too black ones.
We'll just not tell H about this little fact, m'kay?
You could make a salsa--diced fresh tomatoes, a few sliced jalape?os, some salt, add some avocados cut into chunks, get some tortilla chips and you've got my mom's ever-popular salsa.
I'm a fan of plain avocado slices as a side or topping--I've never had a need to dress it up. I just share the slices with the husband, or use it in tostadas and tacos.

Yes, a paper bag will speed up the ripening several days.
I like to put avocado in tortilla soup, or green chile stew, or even red chili. Or I slice it in half, put Miracle Whip on it, and eat it with a spoon. mmmmmm
