favorite healthy work day lunches
i need some inspiration. today i had some soup and a lettuce wrap but i have a feeling this would get old fast.

We have a salad bar at work, so I'm usually uber lazy and get lettuce, chicken breast, bacon, and parmesan cheese. I then make my own dressing out of olive oil, red wine vinegar, pepper, and a dash of mustard.
Otherwise, I love leftovers for lunch. Stew or soups in particular are awesome because they're only one dish.
Remember you can get super creative with the ingredients you put in your lettuce wraps.
I usually bring leftovers or go have a sandwich made at the local deli - not always the best but its better than a lot of my options downtown.

jumped ship to the new and improved nest. back to TB for baby boards.
- "taco salad" -- black beans, pinto beans, salsa, lettuce and corn (optional), with either tortilla chips or a tortilla/wrap;
- gyro -- whole wheat pita (toasted if possible); tzatziki sauce (yogurt, dill/mint, feta, pepper, lemon juice); grilled chicken/other meat; veggies as desired (tomatoes, onions, etc.); romaine (or make as a salad)
- dal with brown rice (can make with carrots, etc. instead of just tomatoes)
- stir fry (veg + meat or tofu) w/brown rice

do you make your own tzatziki sauce? i love gyros!
I don't have measurements, but this is about what i do:
Stir together:
1/2 c yogurt (greek yogurt is great, but any non/lowfat plain yogurt will work, and actually works better if you're using it more as a salad dressing)
1/2 T dried or 1/8 c fresh onion (I use dried onions b/c they are less bitey and my eyes water too much cutting fresh ones; it rehydrates fine after a few min in the yogurt mixture)
1/8 tsp freshly ground pepper (to taste)
1/2 T dried dill
1/4 T dried mint (i don't always add this)
1 tsp lemon juice
Add:
feta (crumbled) (or leave this out and add some salt)
Then add (if you are making it ahead of time, wait to add these till just before serving):
About 1/3-3/4 c vegetables
- cucumber (slice, sliced and quartered, or shredded; if you shred it you'll also want to drain it)
- tomatoes
- olives
- you could also do sauteed veggies if you wanted to include others/if you prefer cooked
- any meat
