Ok, let's do this thing, girls! 

I say folks reply to this post with their FAVE tried and true healthy crockpot recipe.

Next week, people can start a thread to review each recipe they tried (you can pick any recipe from the ones people post here except yours) - feel free to include what the SO, family, etc though, photos, any modifications you made, etc.

  • Super Easy "Pulled Pork" 

    This is a non-traditional pulled pork b/c generally pulled pork is dry roasted for a long time on low heat and then you add sauce. This is made using a leaner cut of meat and cooked in sauce. But it is really good, easy, and great with some nice corn bread or in a sandwich. 

    Ingredients:

    2lb pork loin roast, fat trimmed
    1 bottle of your favorite BBQ sauce (I particularly like Trader Joe's)
    1 large onion, chopped
    2 TBSP honey
    cooking spray

    1. Spray crockpot with nonstick cooking spray.
    2. Place chopped onion in bottom of crockpot, and put pork on top of onion.
    3. In a small bowl, mix BBQ sauce and honey. Pour over pork and onions.
    4. Cook on LOW for about 8 hours.
    5. Shred pork and cook another 20 min in the sauce mixture.

  • I think this is pretty healthy - as a main dish it is anyway.  You can certainly make it unhealthy with sides!

     

    Slow Cooker Pulled Pork
    prep time: 30 minutes
    cooking time: 6 hours
    servings: ~10

    2 lbs boneless pork roast
    1 bottle (~18oz) BBQ sauce
    2 cloves garlic
    1 medium onion

    1. Cut the pork into cubes (~2 inches square) and brown in a skillet. After all sides have been browned, transfer to slow cooker

    2. Chop the onion and mince the garlic and add to skillet. Brown until tender. Add to slow cooker.

    3. Pour entire bottle of your favorite BBQ sauce into the slow cooker and stir contents.

    4. Cook on high for about 4-6 hours (will depend on your crockpot). Pull pork apart with a fork and keep warm until ready to serve. Serve on hamburger or bulkie rolls.

  • I made this up one night in lieu of regular fajitas and it was really good!

    Chicken Fajita Chili

    1 lb. skinless, boneless chicken breasts, cut into 1-inch pieces
    1 1/2 tsp. chili powder
    1/4 tsp. paprika
    1/4 tsp. onion powder
    1/2 tsp. ground cumin
    1 clove garlic, minced
    1 Tbsp. olive oil
    1 can diced tomatoes, undrained
    1 green bell pepper, coarsely chopped
    1 red bell pepper, coarsely chopped
    1/2 onion, coarsely chopped
    1 can pinto beans, rinsed and drained
    Sour cream (optional)
    Shredded cheddar cheese (optional)

    In a medium bowl, combine chili powder, paprika, onion powder, cumin, and garlic. Add chicken and toss to coat. Heat olive oil over medium-high heat. Cook chicken in hot skillet until browned on all sides, stirring occasionally.

    Place chicken in slow cooker. (I used a 6 quart slow cooker.) Add undrained tomatoes, vegetables, and pinto beans. Cover and cook on low-heat setting for 4 to 5 hours or on high-heat setting for 2 to 2 1/2 hours.

    If you use a tenderloin it totally is healthy. I think mine is an adaptation of a WW recipe actually. I mean, it's moderation - you get like 3/4 cup of the pork as a serving and it will fit in a healthy diet!

    Spray the crock with cooking spray. Place a 3-4lb chicken in the slow cooker on top of some balled up aluminum foil*. Season with salt, pepper, paprika, onion powder, and garlic powder. Cook on low 8-9 hours or until cooked through (170 degrees).

    *To make the whole meal in the slow cooker, you can put potato and carrot chunks under the chicken in place of the foul. If you do this, put just a bit of water or brother in the crock as well.

  • Crockpot Hawiian Chicken
    Prep Time: 5 min
    Cook Time: 8 hours on low

    4-6 Frozen Chicken Breasts
    1 large can crushed pineapple (drained)
    1 Bottle BBQ Sauce

    Put Chicken in crockpot, cover with pineapple then BBQ sauce and cook for 8 hours on low.

    Shred chicken and put back in crokpot just to mix in all the good flavors. I serve on Hawiian Rolls with a veggie side dish.

    I think I got the recipe from someone on this board but I don't remember for sure. I LOVE IT. Oh and I want to say the original recipe called for onion but I always omit it.

    Crock Pot Applesauce

    Calories: 65.9 ? Fat: 0.2 g ? Protein: 0.2 g ? Carb: 17.5 g ? Fiber: 2.8 g ? Sugar: 12

    Ingredients:

    • 8 medium apples (Use a combination of Golden Delicious, Honey Crisp, Fuji, Gala, etc.)
    • 1 strips of lemon peel - use a vegetable peeler
    • 1 tsp fresh lemon juice
    • 3 inch cinnamon stick
    • 5 tsp light brown sugar (unpacked) - or agave


    Directions:

    Peel, core, and slice the apples.

    Place them in the slow cooker. Add the cinnamon stick, lemon peel and brown sugar. 

    Set crock pot to low and cook for 6 hours. Stir apples occasionally, apples will slowly become a delicious applesauce.  Remove cinnamon stick and use an immersion blender to blend until smooth or if you prefer a chunky sauce, leave sauce intact.

    Makes 3 cups.

  • And I made this over the weekend for my breakfast. I used fat free evaporated milk instead.

    Pumpkin Spice Oatmeal in the Slow Cooker

    Ingredients

    • 1 cup steel cut oats
    • 1 12oz can evaporated milk
    • 3 cups water
    • 1 cup pumpkin
    • 1/2 cup brown sugar
    • 1 1/2 tsp. cinnamon
    • 1/4 tsp. nutmeg

    Instructions

    1. Spray the inside of slow cooker crock with cooking spray.
    2. In a large bowl, stir all ingredients together.
    3. Pour into slow cooker.
    4. Cook on low for 4-5 hours or overnight. Mine cooked 8-9 hours, but if I had a programmable slow cooker I would set it for less time.
    5. Serve with extra milk, if desired.

    Yes and yes. I've never done from frozen, but they say it works on the cooking board. Personally, I like using chicken that is bone in for this because I think there is extra flavor, but it should work with boneless breasts too. Also, mmmm sweet potatoes!

  • I just toss in some frozen chicken breasts, a jar of salsa, some black beans and frozen corn.  

    Sometimes I shred up the chicken and eat it like a soup, sometimes I drain out most of the fluid and eat it in a burrito.  I love love love it.

  • Last night I told Jeff we were doing this and he said I had to tell you girls about a recipe we tried on Sunday. He LOVED it. It was super good.

    Golden Pork with Cinnamon Sugar Apples

    ETA: I used Cream of Chicken soup instead of mushroom 'cause I hate mushrooms.

  • Aha, finally found a recipe that is crockpot AND healthy. These are good b/c you don't fry them.

    Flautas de Pollo
    adapted from Southwest Slow Cooking

    1 jalapeno, seeded and chopped
    1 white onion, chopped
    5 garlic cloves, finely chopped
    3-4 boneless skinless chicken breasts
    1 T oregano
    1T black pepper
    1 tsp chili powder
    cheese
    warm tortillas
    oil

    Put first 4 ingredients in crock pot. Add the next three. Cover and cook on low 5-6 hours.
    Shred chicken. Fill tortillas with chicken mixture and cheese. Roll up and place on baking sheet.
    Brush with oil. Broil 3-5 minutes.

    Me! I use boneless chicken thighs and the onion! This freezes really well too :)
