We're having a medium sized party on Saturday for co workers for DH and me. We're hosting it and doing all the cooking but I need 1 more appitizer type food. The party is all appitizers and expecting about 30 people. So far we're having:
Buffalo Dip (Crack Dip)
Shredded Chicken Taco station
Veggie Platter
Cheese/Sausage/Crackers
I have WAY too much chicken though so I wanted to do another appitizer. I was going to make buffalo chicken bites (a receipe from foodnetwork we like) but I don't want to deep fry them since it will stink up the house (the deep fryer). I know it's all chicken but that's because everyone coming only eats chicken (only a couple of red meat eaters.. odd I know). What other shredded chicken recipes do you have?

I don't think I'd do another chicken thing. What about shrimp? A shrimp tray or some good steamed shrimp.
Fruit skewers
Chips and salsa would go with the tacos. Fresh salsa made from roasted tomatoes, peppers and garlic is sooo easy and really good.
Mini quiche or a flat bread/pizza type thing that you cut up.
Cheese puffs/gourgeres (I can never spell that)
Is the party later in the evening? If it's near dinner time at all, I would really try to bulk up the menu with a salad. I can't tell how substantial your taco station is. Oh, and something sweet. Definitely throw in some kind of dessert if you haven't already.

Not shredded, but why don't you do chicken satay?
They're just seasoned breast tenderloins grilled up on a skewer and basted with peanut sauce.

I like cheeky's idea. I have a slow cooker pulled chicken recipe that I use. Actually, it's not meant for a slow cooker but that's how I prep it.I always double the sauce amount:
Black Pepper and Molasses Pulled Chicken Sandwiches
That would be easy since it could be prepped ahead of time, and you could get those little slider-size buns so people could serve themselves but still keep it appetizer-sized.
