i made a double batch of annie's eats pumpkin spice pancakes this morning. we made them last week and i thought about them all week long! I alter the seasoning a bit, using pumpkin pie spice blend in addition to straight up cinnamon and a lot of it, but it is composed of the same ingredients.

dh watches the chew for work and it has turned him into a middle aged housewife. recently he saw a segment where they cored an apple, cut into rounds, dipped it in pancake batter and cooked on a griddle like pancakes. you can use a few different other fruits too - pear, pineapple, etc.

so, he prepped a honey crisp apple (not knowing they are $1 each and my special apples - lol! he could have taken one of the farm picked rome ones from last weekend) and dipped it into the pumpkin spice pancake batter.

 as thin as he made them, the edges still don't really cook, so i put them on a foil lined toaster pan in the toaster oven, smeared a bit of the land o lakes cinnamon sugar spread on them and baked at 300 for a bit until it seemed cooked through. this further cooked the apple and it was much softer.

dusted with powdered sugar - and this was AWESOME.
