Re: Baking?

  • Just a fair warning: this cake is addictive and so easy to make - it is my go-to PMS craving chocolate cake :)

    Hot Fudge Pudding Cake:

    1 cup all purpose flour

    2/3 cup granulated sugar

    2 tsp baking powder

    1/2 tsp salt

1 tsp ground cinnamon (you can leave this out if you want a more traditional chocolate cake)

    1/2 cup unsweetened cocoa

1/2 cup whole milk (I use almond milk to make it vegan and more figure friendly)

2 tbsp melted butter or margarine

    1 tsp vanilla extract

    1 cup packed brown sugar

Preheat oven to 350F and grease an 8x8 glass baking dish. In medium bowl combine flour, granulated sugar, baking powder, salt, cinnamon and 1/4 cup cocoa. Whisk in milk, butter and vanilla just until smooth. Spread batter into baking dish. In a small bowl mix brown sugar and 1/4 cup cocoa. Sprinkle evenly over batter. Carefully pour 1 and 1/2 cups boiling water over mixture in baking dish. Do not stir. Bake for 30 minutes (batter will separate into cake and pudding layers). Cool in pan on wire rack for 10 minutes. Serve with ice cream if you like.

  • I made this coffee cake last winter and loooved it. I'm sure you can substitute any type of pie filling.

Also, if you're looking for a home made whipped cream recipe (to put on just about anything), I loved this raspberry whipped cream. In the link that I sharred, there are a bunch of variations.

  • It's not exactly baking, but I found a great recipe for chocolate pudding from scratch.  I've already made it 3 times (double batch each time) & my hubby keeps asking for it.  I usually add some ground raw cacao at the end for a little bitter crunch.

I also found these mini pie in a jars, which I think are abso-freakin-dorable (plus you can make and freeze them for baking later):
