cooking question...and I'm math-challenged...
I'm making the Campbell's cheesy chicken & rice casserole tonight, which is:
1 can cream of chicken soup (the low sodium version is just fine if you prefer)
1-1/3 cups water
3/4 cup uncooked regular long grain white rice
2 cups frozen broccoli
1/2 tsp onion powder
4 boneless, skinless chicken breasts
This serves 4, and I'm serving 6, so I need to make more rice in the casserole. I don't know if I should double the rice...that seems like a lot. I'm afraid to mess up the rice/water ratio, and especially considering there is more liquid in this dish than just water I'm not sure how I should go about adjusting.

Since you are increasing size by 1/2, I think it would be the original recipe + half of each ingredient
1.5 Can Cream of Chicken (1+.5)
2 cups water (1.333 + .6666)
1 1/8 cup rice (3/4 + 3/8)
3 cups broccoli (2 + 1)
3/4tsp onion powder (1/2 + 1/4)
6 chicken breasts

Yep, this. Or, you could make it even easier by just doubling the recipe and having leftovers for lunch the next day.
Will all of that still fit in a 9x13?
making two full batches would work too. I'd probably make it in one 9x13 and 2 of the square aluminum ones so I could freeze one of those for a meal for the 3 of us later.
