Meals with left over roast?
I am putting a roast in the crockpot tomorrow and I need some ideas of what to do with it. I love a traditional roast and potatoes meal, and could eat it several times a week, but DH hates it. What else can I do? I'm trying to eat more lean red meat b/c I was told I'm anemic at my last appt so I'll probably be doing this quite often.
So far I have phillies and shredded beef tacos on my list

Re: Meals with left over roast?
I love to do a Chipotle spin on my leftovers. Shred the meat and add barbeque sauce, red hot sauce, lime juice, cilantro, chili powder, cumin, etc. Then serve on tortillas with some rice, black beans, avocado...YUM!
You could do soup and stew, too.
