I made Southwestern stuffed acorn squash on Sunday http://www.eatingwell.com/recipes/southwestern_stuffed_acorn_squash.html , I'll be alternating that with Lebanese green beans w/ rice & chicken until the weekend.
I tried out cooking dry black beans in the crockpot this weekend. Probably not good timing, but I'm being pretty selective about what food we're actually going to transport. I have no idea what I even want to keep or if I should just give away anything that is open in the pantry. I might make some sort of black bean soup for next week, then just ditch whatever I have left on Wednesday.
I won't have any recipe reviews for another few weeks since this week I'm alone, next week I'm packing (and alone for half), and the following week we're in transitiona and don't move in until Thursday.

we're kind of day by day here, so I won't be doing any crock pot recipes this week just in case...
tonight I made vodka sauce with tortellini
tomorrow I have tofu with a curry simmer sauce and veggies on coconut rice
haven't thought past there though...
tonight will be tacos.
I've also got steak on the menu, and um, I'm not sure what else. Oh, baked chicken, coated in French's fried onions. I won't be doing a crockpot recipe this week.
Blog
I roasted a chicken in the crock pot Sunday and had mashed potatoes and sweet corn.
Monday we had a throw together version of Shephards Pie with the left over mashed potatoes.
Lastnight we had spaghetti, salad, and garlic bread.
Tonight I think we'll have chicken quesadillas with the leftover roasted chicken.
No clue about the rest of the week.
