Freezer meals?

Anyone prep freezer meals? I think I might attempt to do a bunch this week since I am still off work. Check this website out  http://www.aturtleslifeforme.com/2011/06/freezer-meals-on-cheap.html

I want 46 meals in my freezer!

Any favorite marinades?

If I buy a whole chicken I have to take out the icky bits huh? Chicken stock tips?

Any favorite freezer meals?

Re: Freezer meals?

  • If I buy a whole chicken I have to take out the icky bits huh?
I think you can buy it with the insides removed, but you do all the bone breaking/cutting/etc.

We have a very small freezer, but we do make some meals ahead.  Since dh and i have such different diets we usually freeze it in individual portions so we can just defrost/cook one serving at a time.
    Chili is my favorite.
Others: lasagna, sometimes pizza, ravioli (though we do usually buy this one), chicken (i'm not sure how dh prepares it), soups/curry, home-made pasta sauce, waffles, and cookies, of course.
Quiches, casseroles and enchiladas also freeze great.  Martha Stewart's website has a lot of good-looking recipes, too.

  • My freezer is also pretty small, but if I'm making a pot of soup or chili anyways, I'll usually find space for a least a few single serving containers of it.

I like to make big batches of homemade pesto to freeze. It doesn't take up very much space and it's a super easy to pull out a serving or two and cook up some pasta or a chicken breast to have with it.

  • The guys at the butcher shop at Pikes will break the chicken down for you, QFC also sells smaller chickens already cleaned. I made my own stock earlier this year and it was fabulous. I froze it in one cup portions in freezer bags. I also froze it in an ice cube try for when I only needed smaller portions.

In my freezer I have meat pasta sauce, chili, tomato soup and barbacoa pork.

  • Heh, I am starting to compile a giant pile of freezer recipes, m'self. :)

My absolute favourite is, of course, lasagna, but I've been thinking about branching out into other things, like pre-cooking taco meat and freezing that and also chili and soup. We'll see!

  • DH and I know a few people at work that do this and we bought a book... next step is buying a small freezer for the garage and then motivating ourselves to do the cooking.  I hate (read: HATE!) going grocery shopping, so if doing a few big cooking weekends means less/shorter trips to the grocery store, I'm all for it!
  • Wow! That blog is awesome! Thanks for sharing! I totally want to do this!
