  • Vodka Sauce

    This is so good and really easy - you'll never buy from a jar again!
    The recipe will make enough sauce for like 2-4 servings of pasta, depending on how saucy you like your pasta!

    Ingredients:

    2 TBSP butter
    2-3 minced shallots
    2-3 minced garlic cloves
    dry basil, parsley, crushed red pepper
    fresh ground pepper and salt
    1 can of tomato paste
    4oz vodka
    1 cup milk (you can use cream to make this indulgent, but I think it is creamy and great with low fat or 1% milk - I would not make it with skim)

    1. in a large saucepan over med heat, melt butter and add in shallots and garlic, stirring and cooking til carmelized and fragrant.

    2. toss in a few shakes of basil, parsley, salt and pepper, stir it up.

    3. add tomato paste and stir around to mix everything up. cook for like 5 minutes, use a wooden spoon or spatula.

    4. add vodka and stir together, scraping any bits up from the bottom of the pan. cook for another 5 min or so.

    5. reduce heat to low and add milk, stir to incorporate everything and cook for 3-5 minutes. add additional salt and pepper, basil/parsley to taste. Serve immediately!

  • Italian Penne Rigate

    1 cup penne rigate (or any small pasta - the original recipe called for pastina)
    2 Tbsp. olive oil
    1/2 cup cubed chicken breast (1-inch cubes)
    1/2 cup small onion, diced
    2 garlic cloves, minced
    1 (14.5 oz.) can diced tomatoes with juice
    1 cup shredded mozzarella cheese
    1/4 cup chopped fresh flat-leaf parsley
    1/4 tsp. salt
    1/4 tsp. black pepper
    1/4 cup bread crumbs
    1/4 cup grated Parmesan
    1 Tbsp. butter, plus more for buttering the baking dish.

    Preheat the oven to 400 degrees. Bring a pot of salted water to a boil over high heat. Add the pasta and cook until just tender, about 5 minutes.

    Meanwhile, heat the olive oil in a medium saute pan over medium heat. Add the chicken and cook for 3 minutes. Add the onions and garlic, stirring to combine, and cook until the onions are soft and the chicken is cooked through, about 5 minutes more.

    Put the chicken mixture into a large bowl with the cooked pasta. Add the canned tomatoes, mozzarella cheese, parsley, salt and pepper. Stir to combine.

    Place the mixture in a buttered 8x8 baking dish. In a small bowl, mix together the bread crumbs and Parmesan cheese. Sprinkle over the top of the pasta mixture and dot the top with small bits of butter.

    Bake until the top is golden brown, about 30 minutes.

    Baked Chicken Parmesan
    Gina's Weight Watcher Recipes
    Servings: 8 ? Serving Size: 1 piece ? Old Points: 5 pts ? Points+: 6 pts 
    Calories: 224.5 ? Fat: 8.6 g ? Protein: 25.1 g ? Carb: 14.2 g ? Fiber: 1.3 g   


    • 4 (8 oz) chicken breast halves, sliced in half
    • 3/4 cup seasoned breadcrumbs (I used 4C whole wheat)
    • 1/4 cup grated Parmesan cheese
    • 2 tbsp butter, melted
    • 3/4 cup reduced fat mozzarella cheese (I used Sargento)
    • 1 cup marinara or Filetto di Pomodoro
    • cooking spray

    Preheat oven to 450?. Spray a large baking sheet lightly with spray.

    Combine breadcrumbs and parmesan cheese in a bowl. Melt the butter in another bowl. Lightly brush the butter onto the chicken, then dip into breadcrumb mixture.  Place on baking sheet and repeat with the remaining chicken.

    Lightly spray a little more cooking oil on top and bake in the oven for 20 minutes. Turn chicken over, bake another 5 minutes. Remove from oven, spoon sauce over chicken and top with shredded cheese. Bake 5 more minutes or until cheese is melted.

  • Spaghetti Meat Sauce

    1 lb Ground Beef (I know my sissy using Morning Star Crumbles)
    1 can tomato sauce
    1 can diced tomato
    1 green pepper
    1 Onion
    Italian seasoning, garlic salt and sugar to taste (I use 4 teaspoons sugar 'cause J likes it really sweet)

    Dice Green Pepper and Onion while browning ground beef, once beef is cooked through cook a couple extra minutes with the green pepper and onion.
    At tomato sauce and diced tomatos.
    Season with seasonings to your desired taste.
    Simmer for 30 minutes
    Serve over spaghetti.
