ETTM: Evaporated milk

I understand sweetened condensed milk.  I bake with it and in Vietnam i learned about its wonders as an addition to coffee.  But evaporated milk tastes awful.  It's like powdered milk with a bonus tinny aftertaste.  I know b/c i had a mystery can in the pantry and decided to taste it.

Why does this exist?

  • Last year I made something with it. I can't remember what, but I remember looking for it at the grocery store.
  • I think I made some sort of cheesecake treats once that had evaporated milk.  I added it to the mixer with the cream cheese and other ingredients.  I would never taste it be itself... Ick!

  • Evaporated milk has less water content than regular milk. So it has a much more stable shelf-life.

    It works well in mac'n cheese recipes, for instance, where you need the milk without as much of the water to dilute the flavor.

  • I've only used it for mac&cheese.

    Confession: I once got condensed milk by accident.  That was some interesting mac&cheese!  Embarrassed

  • Well. I mean, it can be used in baking sandwich bread too. Either evaporated milk or powdered milk so you can get the good milky flavor without all the liquid to ruin the texture. :)

  • love tres leche! its DH favorite! I should make him one! :) I haven't found tres leche here in Bellingham, or flan. both of them sooo yummy!
