I understand sweetened condensed milk. I bake with it and in Vietnam i learned about its wonders as an addition to coffee. But evaporated milk tastes awful. It's like powdered milk with a bonus tinny aftertaste. I know b/c i had a mystery can in the pantry and decided to taste it.
Why does this exist?

Evaporated milk has less water content than regular milk. So it has a much more stable shelf-life.
It works well in mac'n cheese recipes, for instance, where you need the milk without as much of the water to dilute the flavor.

I've only used it for mac&cheese.
Confession: I once got condensed milk by accident. That was some interesting mac&cheese!
