I hate it!
I don't eat animals. Any simple recipe ideas? Please share, I've been eating cereal for dinner daily for about a month!
Re: cooking for one
I used to make a yummy easy pasta dish when I was single and on a budget
Just heat a small can of tomato sauce with melted Gruyere cheese and a splash of red wine and a sprinkle of black pepper (sometimes I'd add sauteed mushrooms). I serve it over Ramen noodles.
I still cook the same and take leftovers for lunch. As for vegeterian meals, I don't have a clue.
Why not make lesagna? (or buy the stoufers vegeterian one) Crockpot soups? Salads are easy for dinner. When I don't feel like cooking I also make sandwiches a lot.
I am not a vegetarian but I hardly ever eat meat. Here are some of my no-meat dinners:
- home made carrot soup (with sour cream and nutmeg). Delicious, cheap, healthy
- lean pockets (pizza flavor with no meat)
- mashed potatoes
- frozen vegetables. You can buy asian sauces and cook evertyhing with tofu. I also love Birdseye Spinach with cream. 2 mins in the microwave.
- pasta. Unlimited options.
I have tried to work on meal planning so that I can make a full sized dish twice a week and eat lunches and dinners (with a few other options thrown in) for the week. I am also largely gluten free. I also use a lot of frozen veggies because it's hard to eat them all by myself before they go bad
-Black bean and cheese enchiladas
-layered roasted veggie enchiladas (layer sauce, vegs (I will use frozen), beans, cheese, then torn up pieces of tortillas- repeat
-steam a large pot of mixed veggies and add tomato sauce- like veggie pasta without the pasta
-brown rice, black beans, and various veggies, sometimes with canned tomatoes to make it more of sauce
-soup
-black bean chili over brown rice
-butternut squash risotto
-pile of salad greens, garden burger cooked and cut into small pieces, salsa and guac (maybe a few crumbled tortilla chips for crunch)
-Of course, cereal or a smoothie
I find that I eat SO much healthier on my own, automatically put servings into small containers and into the fridge for lunch/ dinner, and get a little more creative adding different spices to the same dishes to change it up a bit. I also have a few extra dishes in the freezer as a back up. I do not have a microwave, but I find that it forces me to make real meals more often
