The girl who is hosting our next play-date group with my teacher friends who are also on maternity leave right now is doing a potluck brunch. Anyone have any recipes/ideas of items that would be easy to make ahead of time and transport, or wouldn't need to "cook" long once I arrive at the location? Even better if I can make it the day/night before. Getting out of the house in the mornings on time has taken on a whole new meaning with this little one.
Brunch for some reason throws me for a loop.

Quiche... make it the night before and heat it up beforehand. I make these for my morning staff meetings the night before and then heat 'em up in the microwave when I get there....
Easy recipe
Bake pie crust in oven for 5-7 minutes on a cookie sheet while you mix the eggs. Place whatever ingredients you want into the bottom of the pie crust when you take it out. Pour egg mixture over the top... bake at 350 for 45-55 minutes (until knife stuck through comes out clean)... top with sprinkled cheese during the last few minutes.
Check out crockpot ideas, too. I haven't tried any myself but have heard great things. You could even go so simple as oatmeal in the crockpot and have toppings in little containers (brown sugar, raisins, blueberries, maybe?).
