Re: Whats cooking this week?
Last night I ate cheddar broccoli soup and a garlic knot from the freezer - trying to clear things out in prep for T-Day. DH had a PBJ sandwich.
Tonight - we were supposed to have salsa chicken in the form of enchilladas, but I forgot to make time for assembling everything in the crockpot. So I may go home at lunch to do it. If not, we will have something fast and easy for dinner.
Tues - girls' night, so apps and wine
Weds - taking my second tray of enchilladas to a friend who just had a baby
Thurs - tilapia with chipotle lime butter, broccoli and rice
Fri - probably pizza
Sat - bday party for my gpop...helping my aunt cook
Friday- Apple Cinnamon Pork Chops in the crockpot (super easy and delish- mix 1/2 teaspoon of cinnamon with 2 cups apple juice, pour over the chops, cook on low for 7 hours. I served it with apple sauce and they were yummy)
Saturday- Cream of Chicken Veggie Soup
Sunday- Bow Tie Pasta
Monday- Tacos
Tuesday- Chicken in crock with cream cheese and italian dressing seasoning (Kel posted this a few weeks back and I loved it) with a side of white rice
Wednesday- Beef stew with dumplings in crock
Thursday- Pizza
Friday- Going to a girl's night out at my mom's church
Saturday- I might make turkey roll ups
Mon: tortilla soup
Tue: chicken and biscuits
Wed: pepperoni pockets and sweet potato fries
Thur: cheeseburger soup
Fri: chili
Once again Im excited to participate in food posts, hopefully I can keep it up!
Mon: crock pot pork chops and some healthier bastardization of a squash/apple/bacon recipe
Tues: crock pot herb and garlic chicken with mashed sweet potatoes and steamed broccoli (or trees as dd calls them)
Wed: beef stew (crock pot again)
Thurs: dinner w family so who knows what my mom is making
Fri: leftovers or pizza
**I should not read this post so close to lunchtime and apparently its taco week for everyone else so I might get on the bandwagon and have that on Friday since I just bought a few avocados for guac.
Sun- Cast Iron Pork Skillet (http://beta.abc.go.com/shows/the-chew/recipes/Michael-Symon-Cast-Iron-Pork-Pie)- super good but makes a TON of food and I didn?t think ahead and make it in 2 batches so I could freeze it. Whoops. I guess I know what I am having for lunch this week.
Mon- maple mustard pork chops, asparagus, egg noodles
Tues- black and red bean enchiladas (http://www.myrecipes.com/recipe/black-bean-enchilada-casserole-10000000520672/)
Weds- pulled BBQ pork and mac and cheese, need a green veggie with this one. I think I have frozen green beans
Thurs- hair appt so leftovers from T/W and baking an apple cake (http://allrecipes.com/recipe/jewish-apple-cake-i/)
Fri- Wedding
Sat- rowing banquet in Jerz
I am making Sweet Zucchini and Carrots, and P.E.A.s (peas, edamame, apple) from the Baby Love cookbook for the little man this week. Kid loves food and puts it away like crazy. He is awesome.
My meal plan also didn't go quite as planned last week...
Sun-pizza and Amsterdam reminiscing/pic sharing with our friends
Mon-Parmesan crusted tilapia with roasted potatoes and salad
Tues-Chicken something
Wed-Crockpot Korean short ribs
Thurs-Grilled pork chops
Fri-?
I'm not sure what I will be eating on what days, but my plan is this:
leftovers from a whole chicken and veggies I roasted the other night
chicken piccata
pierogies
turkey burgers
maaaaybe chicken fried steak
and that's as far as I've gotten
I just did what I am praying is my last major food shopping trip until at least after Thanksgiving...we'll see!
Monday: hot roast beef sandwiches, mushrooms and asparagus on the side (I have some that I have to use or it will go bad very very soon)
Tuesday: Gorditas
Wednesday: Chicken in some form- I may look up the chicken recipe someone mentioned with cream cheese and Italian dressing...
Thursday: Trying a new recipe from Campbells- it's like a shepherds pie casserole type thing
Friday: either leftovers or a sandwich of some sort- I am going to a Tastefully Simple demo so I'll snack plenty there I'm sure.
Saturday: keeping that open- plans are up in the air for my sister's bday, so I'm not sure if dinner or anything will come of it. If not, something easy or maybe going out with DH, who knows.
Sunday: DH and I will each be at different family birthday dinners. November and December are insane with our families and the birthdays.
