Tacos. Everyone loves them, and they are so easy. When I'm feeling uninspired I gravitate towards them.
Also, roast chicken with some veggies and/or potatoes on the side. It's easy to make and then you have chicken left over to make other things with.
Spaghetti. Can't go wrong there!
Chili is a frequent one for me. I do a super simple recipe and it honestly takes like 10 minutes to throw together. I usually make enough to feed us for a few days, so that's a bonus.
Meatloaf, spaghetti, hamburgers, tacos, slow cooker pot roast, and steak with potatoes are other fast favorites. If I'm eating alone, I make mac & cheese.
This salmon penne is surprisingly fast, and you can get cheap canned salmon and jars of artichokes at Costco.
Pasta fresca is another one I make a lot, but it's a little more work so I have to be in the mood for it.
I'm right in line with the pp (tacos, spaghetti, etc). This is also a go-to for me:

It is FI's favorite meal I make. I keep garlic, montreal steak seasoning, chili powder, and canned chilis on hand at all times (left over chilis from a can can be put in a ziploc bag and frozen and dethawed repeatedly for future use). (I never use the onion)

Or Santa Fe Chicken but I bake it for an hour at 350 instead of crock pot.
