for cookies at a craft show? Here's what I'm thinking... you think this is reasonable? Too much? Too little?
I'm making a bunch of just regular sized cookies - choc chip, gooey butter, and COW (Cranberry Oatmeal White Chocolate), thinking about doing those for 2/$1
Decorated winter sugar cookies - $1 each
Mini pumpkin butterscotch cupcakes with cinnamon cream cheese frosting - $1 each
chocolate molded winter lollipops (snowflakes, christmas trees) - $2 each
chocolate covered oreo snaowman pops - $2 each
cookie mixes in a jar $8 each? $10 each? Productions costs were around $4 each for the jars, baking ingredients, ribbon, etc. This is the one I'm really having trouble with....

Most of your prices sound reasonable to me. There are a couple things that stand out though.
The mini cupcakes: are these standard mini cupcakes? If yes, then I might make them 2/$1 as well. I don't think I'd personally pay $1 for one mini cupcake but probably would for 2.
The cookie mixes are hard. The prices of pre-made cookie dough are around $3-$4 in the grocery store (at least around me they are). I know you said they cost about $4 to produce, I'd start with a tag of $5-$6 and see how they sell. If you make them too pricey people won't buy them because they're figure they can just go buy their own stuff or buy packaged cookie dough. Now if you have some special jars for out of the ordinary kind of cookies with special ingredients you might be able to charge more because people won't want to go out to buy special ingredients.
Another thing to keep in mind, which you may have already thought of, you're going to want to have lots of singles and fives on hand based on the prices you're working with.

And I totally agree abotu the cookie mixes, that's why I'm having such a hard time. They are super cute M&M cookies, and I know a lot of people buy them for gift for neighbors and stuff and don't want to make them themselves. So that's more what I'm banking on, not just people buying a cookie mix to make at home, you know?
I originally wanted to price at $5, but once I figured out production costs, I know $5 wouldn't be worth it. I think I will start at $8 and see how that goes.
And I plan on having a TON of change, no worries.

And trust me, if I was buying your cupcakes I would pay $1 for one but that's because I know how delicious all of your recipes are. But a stranger might not look at it the same way
Also, people often go to craft shows in pairs or groups. So, if you can get more people tasting your goodies without much profit loss then it probably would be worth it in the long run.

i agree with Vanessa that buying a pre-packaged dough at the store is $3-$4 but I think that if someone is going to buy your jar mix, its probably going to be a gift. they may not be a baker themselves but know someone who is and personally it would be easier for me to spend the $8 and buy one than make it and decorate it and put together the recipe myself. I think $8 is totally reasonable.
have you considered putting out a few for tasting? maybe just one thing and a couple cut up into bites. if you have a tasting tray, i would definitely be more apt to stop at your table than someone else's. just a thought.
