Chicken Enchiladas
Cook 3-4 chicken breasts (bake, boil, grill or sub 1 rotisserie chicken)
In electric skillet, melt 3-4 Tbsp butter, saute 1/2 onion. Add enough flour to make a paste, brown. Mix 2-3c Watkins chicken base, incorporate s-l-o-w-l-y into the roux. Add chicken. Mixture should be slightly soupy. Grease 9x13 pan, add small amount of chicken mixture and small handfull shreaded cheese to each tortilla, line up in pan. Use remaining sauce to cover the tortillas, add some cheese. Cover with foil, bake at 350 for 30mins or until cheese is bubbly.
ETA: These freeze well, so I usually make a double batch and freeze the other pan.

Preheat oven to 350
Brown hamburger (1lb-2lb, depending on how many you want)
Mix in a bowl, 3 cans of Cream of Chicken, a can of water and a package of taco seasoning.
After browning meat, pour a 1/4 of mixture into hamburger and 1 cup of mexican cheese
Place 1 tablespoon or a little more into tortilla and roll (add jalepanos if you wish)
Place roll into baking dish. Once filled baking dish(es), pour Cream of Chicken mixture on top of rolled tortillas. Then sprinkle 3 cups of cheese on top of mixtures.
Bake for 30 minutes.
I have made with chicken before. We usually eat 1.5 with sour cream and then have left overs for lunch. G
Cream Cheese Chicken Enchiladas
3 chicken breasts
2 medium onion
1/2 tsp cumin
1/4 tsp minced garlic
1/2 tsp chili powder
1/2-1 c salsa
8oz light sour cream
1/2 pkg light cream cheese
2 cups shredded cheese
fry chicken & onion (i boiled chicken first then shredded then fried with onion). add seasonings and salsa. then add cream cheese, sour cream and 1 cup shredded cheese. put spoonfuls in tortillas, wrap & place in greased dish. sprinkle with remaining cheese. bake at 350 fro 20 minutes.
and for beef ones....
i do
1.5 lbs of ground beef
2 big cans of mild enchilada sauce
2 cups of shredded cheddar
brown your meat (i use garlic pepper for seasoning) then add 1 1/4 can of sauce to meat plus 1 cup chz
spoon into 8 in tortillas, wrap, place in dish... pour remaining sauce on then top with cheese.... cook on 350 for whatever the can says.... after cooked top with peppercini peppers or eat plain (super easy and actually very good)
