I took a class at COOK this past weekend, Holiday Baking with Norrinda Brown of Brown Betty Dessert Boutique, and it was amazing! I just looked and they've added new December classes. Yes, it is expensive. Yes, it is a splurge. But I highly recommend it. They are only able to seat 16 people per class so the classes sell out quickly.

There prices seem reasonable, and also comparable to classes offered at Viking & The Restaurant School.
I've only taken the one class but it seems to me like the amount or participation depends on who is teaching the class. The best way I can explain it is to imagine you are actually participating in a cooking TV show. You get to watch the cook make everything but all the preparation has already been done. Some dishes are magically already made but you get to see how they were made without having to wait for the cook time. You also get to ask questions and, now and then, get to help out by adding an ingredient or two. In the dinner classes, each course is paired with wine.
For the class I took, we got to take home cookies, cupcakes, sweet potato pie and apple brown betty. Three kinds of cookies were already made when we got there, and waiting for us to eat as soon as the class started. The prep for the apple brown betty was already done and we got to "make our own" by layering all of the ingredients in to-go containers. While those baked, we learned how to make the batter for sweat potato cupcakes and while those baked she explained how to make pie crust and answered questions. The sweet potato pies were already made and were cut into slices for us to take home with us.
