I finally made apple cider

I posted a year ago about making apple cider at home in a food processor.  I finally got around to trying it two days ago so I thought I'd post a review.

Two kilos of apples took about two hours to process and made a quart and a half of cider.  When I finished I thought that it wasn't worth it, but as I'm sitting here enjoying a mug of hot cider I am thinking that it definitely was.

Method:

-wash, core, and rough chop a variety of apples

-blitz into a fine pulp in the food processor

-strain pulp through cheese cloth

-pasteurize if you want to

Re: I finally made apple cider

  • Wow. I'm not a huge apple cider fan, so it probably wouldn't be worth it to me, but that sounds like a lot of dedication on your part. And now here's a question that I don't feel like googling -- how is that different from warm apple juice? I thought apple cider was somewhat fermented, but the process you described doesn't include fermentation. I'm totally ignorant on the subject, though, so enlighten me if that was a stupid question :-)

Apple Cider is not as filtered as apple juice. It's not as clear and I find it tangy. It's really good warm with cinnamon. You should try looking at it in the store Kelly. The grocery store in Switzerland had it and the regular kind. It's unfiltered but I'm not able to zoom in on the picture enough on my phone to read the German. And once I found it I never really looked at the label. After reading the website they put pear juice in it too... I feel lied to now. Haha. I don't think they add it to the stuff in the US. Maybe a health foods store in Germany might have it. If you wanted to try it.

  • So regular apple juice was called Apfelsaft Klar and the cider was called Apfelsaft naturtr?b. At least in Swiss German it was I gave up trying to differentiate after awhile. I've also had it at the Christmas market in Dortmund. It was a win for me since I hate Gl?hwein.

  • Oh, that's all it is? Like I said, I thought it was somehow fermented. We usually get both the clear kind and Naturtr?b, although I tend to prefer the clear. :-) I'm now that much smarter. Thanks for the explanation!

It's amusing how much you can learn about pressed apples! :D Most of the world I guess calls the fermented alcohol version cider. And Pub I am impressed by your determination to make the stuff!

  • The misunderstanding may be that in the UK, cider is alcoholic and not just pressed apples.  I had a bear of a time explaining the US version of cider versus the UK version to people on both sides of the pond.

In North America apple cider isn't an alcoholic beverage.  You make apple juice from apple cider by filtering the hell out of it until no pulp remains and it's clear.  Cider is cloudy and tastes different because it retains the liquid pulp that's been removed from apple juice.

Everywhere else, cider is like Strongbow.

  • I miss apple cider a lot at this time of year but that sounds like a lot of work!

  • Sounds delicious! Too bad I'm way too lazy to make it.

Maybe a dumb question, but how do you pasturize?

I don't think that's a dumb question.  Well, if it is, I have the same one as I have no clue.

Put it on the stove and bring it to a low boil.
