Meals for Dinner

I feel like my husband & I eat the same things for dinner all the time. It's time to start doing some different stuff. Lets try something & I'm sure it will help others out too. List maybe a weeks worth of meals (5-7) that you like to fix or that you have regularly. If you want to include recipes for them that is fine, if not that is fine too! =)

  • Some easy recipes that I like to use are:

    Chicken parm

    baked BBQ chicken 

    ham and twice baked potatoes

    stir fry 

    And I LOVE allrecipes.com.  You can find pretty much any type of recipe on there and they have tons of reviews so you generally know if it's going to be good or not.  You can also save recipes to a "recipe file" and refer to them later.

     

  • Main go to's for us are

    Spaghetti
    Turkey (the banquet frozen ones and we just make open faced sandwiches)
    Polish Sausage and Perogi
    Hot dogs & burgers
    Chicken Cord en blu (the barber frozen ones)
    Goulash
    Porkchop abracadabra (made in the crockpot)

  • I try hard to make enough to get leftovers or to use what is left to make something different.  I tend to make something in the crockpot once a week that leads to another meal. 

    Here is my menu for this week

    Last night: homemade spaghetti and meatballs

    Tonight: meatball sandwiches

    Tuesday and Wednesday: salsa chicken in the crockpot and rice

    Thursday: parent/teacher conferences (DH is on his own)

    Friday: chicken cheese steaks or dinner out

    Other foods I make regularly are shrimp and pasta, bbq pulled chicken in the crockpot, rotisserie chicken in the crockpot, pot roast, and tuna steaks.  Often times I make baked potatoes or rice with dinner.  Then I add some veggie or fruit.  

    DH could eat the same foods all the time, so I switch it up for me.  I have realized how much easier making enough for leftovers makes my life.  I love when dinner is basically already made when I get home!

  • I tend to make one-dish meals more often than not. They're quick and easy to clean up after. We aren't vegetarian, but we don't cook meat very often. A few of our favorites are:

    Grain and veggie salad - grilled or sauteed veggies (onion, grape tomatoes, zucchini, squash, peppers, etc) mixed with a grain (pearl couscous, quinoa, farro, winterberries, etc) with salt, pepper, olive oil, and balsamic vinegar. We usually add some cheese too (mozz, fontina, gouda). It's quick, healthy, and good.

    Black bean or lentil burritos/tacos - with all the fixin's.

    Homemade burgers (turkey, chicken, or black bean)

    Homemade pizza or calzones - we use our bread machine to make the dough

    Potato and pea curry - this is from my favorite Indian cookbook, called Entice with Spice. I took a class from the author. She has a lot of easy, amazing Indian dishes, and they all use the same curry base, so you can make that ahead of time and freeze it.

    Penne with vodka sauce and broccoli - Vodka sauce is super easy to make and so much better than jarred sauces.  I add the broccoli for crunch and healthiness.

  • DH does the majority of the cooking but here are a few of our regular go to meals

    Tacos (in a kit or using the El Paso seasoning mix, beef, cheese, and tortillas or hard shells...easy and quick)

    Jambalaya (DH uses the Zatarans package and adds chicken or sausage or both)

    Chorizo and black beans

    Buffalo chicken wraps (bake or microwave frozen chicken breasts or tenders, heat up a tortilla, put chicken on tortilla with bleu cheese or gorgonzola cheese and some buffalo sauce, wrap up and eat..delicious!)

    We also add rice to meals. DH makes chicken (frozen General Tso's or something that he heats in the oven and then he makes rice in the rice cooker and we eat the chicken over rice) 

     

  • haha, this weekend I was complaining that H never gives me meal ideas each week after he complained that we eat the same things every week. We landed up spending some time on saturday making a list of 31 meals that either one of us or both of us like.  Then we stuck them on the calendar for November and December. It's kind of nice knowing our meals are planned and our grocery lists are all make up already for the next month!

    This is a GREAT idea!
