What kind of GF stuffing are you making? Cornbread? I'm looking for a good GF cornbread mix that everyone (or almost everyone) will like.

    I make traditional stuffing. Satueed onion, celery, apple, poultry spices, etc. mixed with cubbed GF bread and with chicken broth poured over it until soggy, then baked. I usually just look up a traditional recipe...nothing special. There is a GF bakery in Poulsbo and I usually just pop in there and buy up all the day old bread a week before Thanksgiving. They usually have a mild rye that works well.

    Also, if you're looking to make a pie. The best mix I've found is "Perfect Pie Crust" by the Gluten Free Pantry. It's buttery, flakey and delicious. It's slightly brittle to work with so it's best for a pie where you don't need a pretty looking top....like a pumpkin or pecan pie or an apple pie with a crumble topping.

    Thanks for the info! I am all about the cornbread stuffing, but thanks for another option! There is a Flying Apron next to my work, so I'll see what they have. As well as Whole Foods.

    I will have to try the GF crust. I've only tried one so far, I will definitely give this one a shot. Thanks!

  • I grew up eating cornbread stuffing, so that's what I go with. It's so delicious! To me, cornbread IS the traditional stuffing!  It must be a southern thing. I didn't know there were different ways to make stuffing until after we moved! My uncle grew up in New York and they had oyster stuffing. That just seems weird to me...

    I'm using my Grandma's stuffing recipe, the only thing I need to change is the cornbread part (obviously.)  I want it right now! Om non nom...

  • I'm from Texas. Even though we moved when I was 10, I still consider it my home state. : )

    We moved for my Dad's job. He sold band instraments and got a job with another company and that brought us to Seattle.
