From my googling it seems like I need a light if I want to be able to read in dark-ish environments, right? Do I need anything else? Do I need like a case or screen cover, or can I just throw it in my bag as is?

You can just throw it in your bag, but I bought a leather cover for a very reasonable price just to protect it better. I don't have a light - I just read like I would with a normal book. If you have a little clip-on light for your regular books, then you can get special Kindle covers with lights built in (that you can turn off or on as you choose. They aren't on all the time).
Also, the charger cable is a USB. That means you have to charge it on your computer if you don't have a convertor. I had one anyway for my cell phone - you plug the USB end into the convertor and stick the convertor in the wall. You don't need to buy the ridiculously expensive Kindle wall chargers - go to your local Best Buy-like store and pick up a cheap one.

my mom (who does have a tendency to overexaggerate!) made it sound like I couldn't even read it in bed without an attached light, is that not true? I certainly don't have a light for my regular books.

excellent, so glad I asked then. This is so typical of my mom to insist that I NEED something that's actually unnecessary. lol.
Any cover recommendations? Can I buy one in a store somewhere, like Target, so I can see how it feels?

and I love it. It's so very handy that it stands up since I regularly read while I'm eating dinner or on a flight or something. But yes, they do sell them elsewhere but I found a lot more choice online. And I would definitely get a case - I just think the screen seems like it would scratch easily although mine hasn't yet.

I personally like the leather cover that Amazon makes (the one that they will recommend when you buy the Kindle). It hooks into the left edge of the Kindle, and works just like a regular book cover. It makes it more comfortable to hold, and the left-hand flap will bend back around behind the Kindle while you read. There's even an elastic strap that holds the whole thing open or closed. There ARE versions of this case that come with built-in reading light that pops out. I think this is a waste of money. Any clip-on book light that you would use with a regular book will work with a Kindle (I only use a book light if I'm reading in bed when my fiance is alseep so I don't wake him up).
I'm jealous. I want one that stands up on its own!
