PCOS friendly Recipe?s Please

So, since being dx w/ PCOS, we have done a really good job of eating healthier.  So, DH and I have cut out pastas, breads, cheese, red meat, and sweets.  On the weekends, we still indulge, but during the week we are generally pretty good.  But, that means we have been eating chicken and brown rice for almost every meal!!!  I am so sick of the same meal with slight variations. 

 

I need some new recipes that follow our restrictions mentioned above, are fairly simple to prepare, and call for inexpensive ingredients.  Please, suggest some new recipes for me.  I have totally lost my motivation to cook and eat healthy because I am getting bored.

  • i'm not of much help, but i could really use some recipes too! I was DXed with PCOS in Feb, but I am such a picky eater its hard for me to find recipes that i like that are simple and inexpensive.

  • Do you like fish or shrimp? Those are good sources of protein. If so shrimp kabobs are good. You can buy a bag of the frozen shrimp that is already cooked when it's on sale. I then usually saute it with some garlic and veggies.

  • When we're on track, we try to stick to a meat and veggies diet and it definitely does get a little boring! Instead of brown rice, try millet or quinoa! I recently did a millet skillet (ha!) and it came out amazing.. I just used diced zucchini, onion, carrots, broccoli, cauliflower and chicken. I didn't really follow a recipe, just kinda made it up... Just use broth and you can cook it all, millet included in the skillet. Delish!

    We also use a lot of sweet potatoes - grilled, they are amazing!

    In Christ alone my hope is found. He is my LIGHT, my STRENGTH, and my SONG!

    T-TTC since Dec 2008. PCOS/nonexistant cycles(anovulation) and endo. HSG in '10 revealed both tubes blocked. Lap surgery in Dec '10 to correct. Failed Clomid/IUI and injectable(Bravelle)/IUI cycles so far.

  • I have a lot of good ones at home (but not now, i am at the office)!  I just got a new Low Carb Cookbook and the stuff is pretty tasty.

    I also LOVE skinnytaste.com.  There is a category for low-carb recipes.  The sesame chicken is yummy!

  • I have PCOS too - what's the reasoning for avoiding cheese & red meat?  I hadn't heard that one and personally have just been trying to do low carb.
  • I agree with PP about quinoa and sweet potatoes as well as the brown rice.  I've even dabbled with barley successfully.  I do a lot of flavorful stir fries or Thai curry-- either with brown rice, quinoa or no other starch at all and eat it more like a soup.  If cost is an issue, I'd try adding in some cheaper protein options (like beans, eggs or tofu) so that you can occasionally splurge on more expensive ones (shrimp, salmon) and keep up the variety.

    Here are some options:

    -- stir-fry: broccoli, bell pepper, onions, carrots, (sometimes eggplant or green beans) plus chicken (or turkey or tofu or shrimp) .  stir-fry in your favorite sauce (I like Soy-Vay Terriaki)

    --Thai Curry:  thai curry paste and light coconut milk with veggies-- any combo will work, though I like to include winter squash and fresh basil 'cuz its awesome, and same list of proteins from above, though I've also used pork chops which worked fine).

    --Chili:  I usually do mine with two kinds of beans, onions, peppers, 1 carrot, few celery spears and spices.  Though you could include ground turkey or ground veggie meat as well.  

    --Tomato-Pesto Tilapia w/ kale (recipe for 1):  microwave medium red potato with skin on (10 minutes in microwave- then slice to be base of dish), Cover Tilapia filet in 1/2 tbsp pesto, Broil Tilapia filet 6-8 minutes; drizzle fish with 1/2 tsp olive oil, generous black pepper, and 1/2 cup sliced cherry or grape tomatoes.  In pan saute 1 tsp olive oil & crushed garlic clove, add 2 cups kale & pink of salt-- saute until wilted, add 1 tbsp chicken stock and cook 2-3 more minutes until tender.

    --Salads:  tons of fresh veggies, baby spinach, salad dressing and sliced steak or chicken.

    --enchiladas-- I use corn tortillas or whole wheat or multigrain tortillas, canned enchilada sauce and a whole bunch of veggies and chicken or tofu or black beans. I serve with salad, and do not serve with rice since the tortiallas are already a carb.

    Actually, the cheese & red meats thing is not PCOS specific.  It's just that they are so high in fats, that we decided to trim them (haha, get it? We trimmed the fat! - sorry, I have a lame sence of humor).  But, all joking aside, with these modifications to our diets, I have lost 50 lb's and DH has lost 30.  So, we are trying to keep up our good habits.   And, when it comes to PCOS, any weight loss is good.  So that's the reasoning.   • I've been cooking a lot with lentils and chickpeas lately.  I don't like actual beans (I wish I did--they're so cheap and healthy!)

     I put carrot, onion, and celery in some olive oil until soft.  Add lentils and water/stock to fill a soup pot.  Sometimes I add a can of crushed tomatoes.  Season with whatever sounds good...I usually use salt, pepper, garlic, and rosemary.  Maybe crushed red pepper.  Simmer until lentils are cooked.  You can cook with the lid on and it makes a soup, or cook it down with the lid off and serve over brown rice.  

    For chickpeas, I just cook them with a jarred curry sauce together with whatever frozen veggies I have.  I really like cauliflower, broccoli, and peas with curry.  Eat straight up or over brown rice.

    My husband and I are big fans of the skinny taste blog.  Their bangin shrimp is to die for.. You could serve it with cous cous or brown rice.  I love cous cous.
