  • Pumpkin!

    We had a luncheon for work today, turkey dinner with stuffing and pumpkin cheesecake for dessert. It was homemade by a co-worker and really good!

    Here's an easy recipe if you need one (I've made it before and it was good):

    Pumpkin Spice No-Bake Cheesecake

     

    Ingredients

    7 oz 1/3 less fat Philadelphia Cream Cheese

    1/2 cup pureed pumpkin (canned is fine)

    1 tsp vanilla

    1 tsp cinnamon

    1 tsp pumpkin pie spice

    1/4 cup brown sugar, unpacked

    8 oz Cool Whip Free, thawed

    9 inch reduced fat Graham Cracker Crust

     

    Directions

    In a large bowl using an electric mixer, whip cream cheese, pumpkin, vanilla, cinnamon, pumpkin pie spice, and brown sugar for a few minutes until fluffy. Add Cool Whip and whip until smooth. Spoon mixture into pie crust and chill for a few hours, until firm.

  • Pumpkin sounds good!  I always vote for peanut butter anything though, so that would be good too. Whatever you make, I'm willing to taste-test for you.  PM me for my address WinkWink

  • I think pumpkin would be good, or you could do chocolate or strawberry.  I think anything would really be fine (and delicious!)

  • Pumpkin cheesecake is the BEST!!

    Instead of a cake, I make individual sized ones (see pic below). Everyone loves it and they can eat as many pieces as they want. I'll dig up the recipe for you, if you want it.

  • I've been toying with the idea of pumpkin (but dh hates anything pumpkin), peanut butter, or traditional.  I can't decide.  I think maybe peanut butter with chocolate crust.

    Peanut butter with chocolate crust sounds awesome!  If your husband doesn't like pumpkin, then I wouldn't do pumpkin!

  • boo that DH doesn't like pumpkin....if you ever make a pumpkin one & need help eating it, let me know!  Wink

    I like strawberry or raspberry or Oreo!!!!!
