    Tacos!  Made w/refried beans, meat mixed w/the Old el Paso seasoning, cheddar cheese, lettuce, green onion, tomato, chunky salsa, and sour cream!  Mmmm!

    There is this thing from my local Mexican joint, they call it a botana.  It's a big pile of fresh, thin and crispy tortilla chips topped with beans and covered with melty hot cheese, then topped with fresh avocado slices, tomatoes, green pepper slices, onions, green olives, optional jalapenos and served with sides of salsa and sour cream.  I could eat it all day, every day, forever.

    Kim, this sounds seriously amazing!

    I would also go with some Mexican dish, maybe even a chicken burrito bowl from Chipotle, with rice, pinto beans, tomotos, lettuce, cheese and some guac on the side!

    Ummm, why didn't we go to this mexican restaurant when we were in town??  haha.  Next time!
