Quick Thanksgiving Menu Question

We're hosting some of the squadron boys. Here's my menu as it stands now:

Queso

Jalapeno Poppers

Veggie Tray

Deviled Eggs

Fruit Salsa with Cinnamon Chips

Turkey

Ham

Rolls

Corn Casserole

Green bean Casserole

Sweet Potato Casserole

Mashed Potatoes

Cranberry Sauce

Stuffing

Caramel Apple Pecan Pie

Marbled Pumpkin Cheesecake

 My question is: is that too many casserole dishes? Should I do sweet potatoes in a crockpot (like baked potatoes) instead and let them make them themselves?

  • The only problem with cutting one of the others is the corn casserole is a must for Mr. Sookie and the green bean is manditory per 3 of the boys. I don't eat sweet potatoes/sweet potato casserole, so I don't care either way. Mr. Sookie says "yum, casserole. I love Thanksgiving casseroles."

  • Hence I'm taking off starting Tuesday after lunch and cooking/cleaning Tuesday afternoon/night, Wednesday morning/afternoon/night, and Thursday morning/afternoon.

  • Nope, single. And a VERY small kitchen. Here's my schedule:

    Tuesday: clean like crazy, any last minute groceries (usually not),

    Wednesday: desserts (minus putting pie filling in pie and baking, that'll be Thursday), brine turkey, veggie tray, prep corn casserole, prep green bean casserole (minus onion things), prep sweet potato casserole (minus toppings), cinnamon chips, rolls

    Thursday: queso (crockpot), jalapeno poppers, deviled eggs, fruit salsa, turkey (smoked), ham, bake all casseroles, bake pie, cranberry sauce, stuffing, mashed potatoes

    Friday: sleep

    Yes I'm super impressed....and drooling.  Yum!  I'm no sweet potato fan so I think the crock pot idea is fine.

  • Your menu is similar to mine but I cut the sweet potatoes. However, I find all other casseroles a necessity. Unless the sweet potatoes are in fry form, I'm not interested.

    Also, I've seen a jalapeno popper dip floating around pinterest that sounds delish and could be done in the crockpot if you have an extra one. It would save some oven space.

  • I love sweet potatoes on thanksgiving, but I've never considered it a casserole. I definitely wouldn't cut it though. 

    Oh and your menu sounds delish!

    My mom and dad just got a fancy new double oven and I can't wait to cook with it next week. I'm damn near giddy about it.

    Oh... how we know we're getting older. lol 

    My parents' old house had one, Mom says she has dreams about it! Sookie, I think it's fine. It's a lot of casserole's, but trying to accommodate everyone's t-day "musts" just requires it. You'll make their day for sure that someone took the time to fulfill their tradition.

    I totally agree with this.

      If you want to you can peel and dice up your potatoes for the mashed potatoes you can put them in a bowl with a lid and cover them with water until your ready to boil them the next day. You can boil your eggs for the deviled eggs the day before too and just take them out so they get to closer to room temp before you peel them.

  • Thanks all! I think I'm just going to leave it as is. This will be the second year we've hosted everyone who doesn't have somewhere to go, and it's a lot of fun for me... well, a lot of work mostly. Wink
