Thanksgiving potluck ideas
DH, BIL and I are driving 2 and a half hours Thanksgiving morning for my stepmom's ridiculously large, very Southern Thanksgiving dinner.
Any ideas on a side I can bring that will keep well during the drive and feed 45+ people? Preferably something relatively simple and can be made in large batches that won't have me slaving away in the kitchen all day to feed the masses.

You can cook this the night before and reheat when you get to your stepmom's, or you can serve it cold. It works both ways

This might be a total cop-out, but I think your best option is some kind of bread or roll. You could do corn muffins, or orange-cranberry muffins (one of my favorites).
Also, I've heard of people doing stuffing in muffin tins to make little single-portion stuffing servings. Not sure how well this would travel, but they should be fine (you can always reheat). http://cookingontheside.com/herb-stuffing-muffins/ There a ton of recipes if you google "stuffing muffins."
I'm no good with suggestions, but I'm liking the stuffing muffins idea!
Here's my recipe for stuffing that I make regularly:
1 Onion, finely chopped, fried in oil till soft.
2-3oz of breadcumbs (I make my own using a slightly sliced pan ie not too fresh)
Salt, pepper, thyme and sage (more sage than thyme as it is probably turkey?)
Handful of chopped cranberries (again, if it is turkey)
Mix together in the pan you fried the onions in but add the breadcrumbs gradually so you don't have the stuffing too dry. It should be moist enough to hold its shape when squeezed together. (the oil from frying is your moisture)
This is so easy and can be adapted for other meats too... I make a stuffed pork steak and use apple in the stuffing instead for instance.
More to the point, I can't believe you are driving that far when you are so close to your due date! I can't imagine having done that when I was pregnant...
I made some Pumpkin Cranberry Breads last year from this recipe:

and it was a huge hit. I actually only used 2 cups of sugar as that just seemed like a ridiculous amount and am going to try and go down a bit more this year. I think I used craisins instead of cranberries so that upped the sweetness already.
Anyway, would be super easy and no problems with travelling!

Mud pie is what everyone in my southern family looks forward to on thanksgiving. I've even made it for my in-laws (yankees
and they devoured it too. It travels really well, can be made in advance, and doesn't need to be reheated, since oven space can be at a premium on thanksgiving.
3/4 cups butter
1 1/2 cups of flour
1 cup chopped pecans
Combine. Press it into a 9x13 Pyrex dish to form a crust. bake at 350 until golden brown ~20 minutes. Allow to cool.
Blend
8 oz package of cream cheese
1 cup powdered sugar
1 cup cool whip
Spread over cooled crust.
Mix
1 large box instant chocolate pudding (or two small boxes)
3 cups of milk
Stir until thick. Pour over cream cheese layer.
Top with remaining cool whip. Sprinkle with pecans.
Store it in the fridge until you leave.
It's heaven on a plate.

@neeps--My family looooves mud pie and one of my aunt's makes a huge batch that is practically gone in 2 seconds every year!
@Irish-OB says I can go as long as my appointment on Wednesday goes well. No Christmas traveling for this gal though, so I wanted to get one holiday in with the fam. My dad wanted me to sleep in the camper with the guys while they are at the hunting camp..hahahahahaha. Funny dad. Reaaaaal funny. 34 pregnant is NOT a good time to sleep in a cold ass camper in the middle of the woods.
