Ours are really straight forward.
He is a police officer
I am a police officer without a gun, hand cuffs, and authority to put people in jail, but I'm expected to teach my kids how to read at 17
ETA: Don't get me wrong I love my job, but it's been one of those weeks.
How would you describe what your DH does? I'd say he fabricates and installs granite.
How would he describe what you do? He'd probably just say I work at a law firm. He knows what I do but I don't think he could really list all my many hats and job responsibilities.
DH friend tells everyone I'm an attorney, because apparently the only people in law firms are attorneys.
My DH is an administrator at a HS. He works in the office doing a variety of things, supervises and is a security guard, and is the Athletic Director.
He would say I work in HR at a non profit. He knows I'm in charge of recruiting, employee benefits and some of the other things I am responsible for.
I tend to call Phil a Finance Monkey or Accountant. He'd probably ramble off his exact title.
He'd say I'm a drama teacher, even though I mostly teach English.

He's a policy analyst with a trade association that represents top research universities to the federal government.
He'd say I'm a writer with a large nonprofit, writing materials that tell donors how their money is being used and thank them for their donations.
DH is a design/mechanical engineer. He models things in 3D and leads a multitude of projects. All very top secret, which makes it more fun.
He would say that I sit on my tookus all day (which I do) and set up events on campus. He doesn't know all the different things I have to do and stay on top of, or all the grief our office goes through. I'm praying that soon he can say I'm an attorney in training (paralegal for a bit).
How would you describe what your DH does? I would say he's an attorney that does health care law. He helps hospitals and helps them get machines and permissions to do certain kinds of procedures. Lots of bureaucracy to get things done which requires paperwork and a lawyer.
How would he describe what you do? He would say I'm an Interior Designer, but say that in some regards its more like architecture. That I handle electrical/lighting etc but also can pick out your sofa.
He's sort of in flux right now, so while before I'd say he was a hardwood flooring installer, now he's more like a manager/site super.
I had to call and ask him what he'd say and he says he's say that I do Computational Fluid Dynamics (which I do) because he likes to talk me up.
We'll just not tell H about this little fact, m'kay?
C is a Youth Worker at a treatment center for adolescences with mental health problems. He tries to help them be productive members of society and work on their issues. Along with being awesome.
He would say that I am and Independent Living Worker for kids transitioning into the community, teaching them about being an adult and stuff. I am also a full time college student, getting a second degree in Sociology.
DH is a Derrick hand on a drilling rig. He has one of the toughest jobs out there, but it's just a step closer to the top of the ladder. Actually, he climbs about 60ft. up the derrick and pulls back pipe. And, he has to be the boss to 3 guys who have titles under him.
He would say I sit on my a$$ all day and watch tv. He doesn't acknowledge the fact that I make money from home, according to him it's just a hobby. Men... I'd laugh if he had to stay home with the kids for a week. He would have a mental breakdown.
I'm laughing at a number of your descriptions.
I'd say B is an alternative investment research analyst, but he would go into great detail about derivatives and computational analysis. Basically, I have no idea what exactly he does all day.
He would say I'm a real estate attorney, which to him means that I negotiate and draft lots of documents relating to real estate.
I'd say he's a lawyer with a heart of gold.
He'd say I "do something like Mad Men." That's a direct quote.
Now jumping domestically.
Well that was a crazy couple of years.
I'd say he works for the government, Ministry of Health, something to do with e-Health (a group developing an electronic patient records system for Ontario).
He'd say "she's one of 3 people working to fix the healthcare system."

How would you describe what your DH does? I would describe him as a fantastic math teacher.
How would he describe what you do? He would say I'm a pharmacist who is constantly saving doctors butts by fixing their mistakes.
His is straight forward. He's an RN working at a hospital in the Med Surg unit.
Hed say I work at an insurance company figuring out people's benefits. Which means recalculating people's files to determine if they have been under or overpaid.
He works at Wal-mart in the dairy department
he would say that "she works for this little old lady that calls her everyday at some point for something" (I'm a home health Care aide)
He's an eighth grade math teacher and coach (and a dang good one, at that!)
He'd say I manage a store, and that on my next promotion, we're moving and he's going to be a stay at home Dad some day... (He's joking, at least about the stay at home part.)
