Will I be able to buy a turkey on Monday/Tuesday?
I haven't bought one yet, and am worried now that it's too late to buy one and put it in the freezer and have it thaw in time. I just read, though, that I can really only keep an uncooked turkey in the refridgerator for up to 4 days. I'm also paranoid that the store will run out of turkeys, which I realize may be irrational, but I've never hosted thanksgiving before, and don't want to be the first in my family to be without a turkey! If it matters, we are looking to get a 6-7 lb turkey.

You may be better off getting a breast if you're looking at that size range. We bought a fresh breast in that range at Harris Teeter and tossed it into the freezer. We'll take it out tonight and brine it Tuesday.

Just FYI, but the Butterball package has the following defrosting guide:
10-18 lbs = 3-4 days
18-22 lbs = 4-5 days
22-24 lbs = 5-6 days
24-30 lbs = 6-7 days!
(This also implies that they don't even sell turkeys smaller than 10 lbs.)
In other words, if you buy a turkey on Monday and especially on Tuesday, it needs to be fresh, unless you're able to find a teeny tiny one (not sure they come that small, honestly).
Also, just for comparison, we're only hosting 6 people total but got one of the smallest (frozen) turkeys we could find, which was 13 pounds. That allows for leftovers. I don't know how many you're hosting, but I agree with pp that maybe a breast would better suit your needs (and would be less time to defrost).

how about just ordering one from Whole Foods? The year I hosted T-day I ordered one of their "oven ready" turkeys. I picked it up on Wednesday afternoon and it was already in an aluminum roasting pan. It goes in the fridge and then the next day, you just unwrap it, and cook it (also, they give you pretty detailed directions).
It was really good, it didn't dry out at all and was super easy.

Conveniently, I went to Whole Foods today for something else, and there was someone standing there ready to help me (this is even before I saw this post!). I was able to order a fresh turkey, though the weight range is 8 - 10 lbs, so may be a bit bigger than we need. We will have 6 adults, one toddler, and 2 girls 7 and 10 who probably won't eat much of anything.
In any case, I am hugely relieved, and now just have to hope there will be potatoes available.
