NER: Cupcakes - a little debacle

Majorwife - I butchered your recipe. First off - this weekend was too busy. I should have stayed away from the new and untried recipes. Last night at 8 I was finally able to work on the cupcakes for today's potluck. I doubled the recipe - might have been my first mistake. Cupcakes came out kind of dry. On to the frosting. The frosting was on the runny side and has little crystals in it - assuming that's powdered sugar. More glaze like than frosting. I suspect it's because I forgot to get cream cheese at the grocery store and used what I had in the house - which was fat free.

The plan was to make two kinds of cupcakes, well due to the lack of time and the frosting issue - I stopped while I was ahead.

I'm not giving up. I'll keep this recipe around to try again sometime soon.

  • I'm not major (she's gone for another week), but I am very sorry about your cupcake debacle! ?What temperature were all the ingredients of your frosting? ?I have a blog post about a time I messed up a simple buttercream--because I nuked the butter beforehand to warm it up. ?It needs to reach room temp by itself! ?It may have been the cream cheese, though. ?Who knows? ?But you will get it!

  • thanks BB! I let the butter and cream cheese sit at room tempture to "soften." I think it was the ff cream cheese. I've made a cream cheese pie before using just ff cream cheese and it wouldn't firm up for anything! I had to stick it in the freezer.
