Do you have any tips for GF gravy? I'm new to learning this style of cooking (my cousin who lives with us has celiac, and also shouldn't have soy or dairy) and since I'm not a fabulous gravy maker, I don't want to just wing it trying Xanthan gum or something as a thickener. Do you mess with the cornstarch paste?

DH said he can look up the recipes when he gets home. Generally, you use a traditional gravy recipe, but will need to use a different starch to thicken. Last year we used corn starch.
This year we're trying a starch called Ultratex 3, which is modified tapioca starch. It's apparently very cool, and allows you to thicken without heat as well, which gives you precise control over the gravy thickness and doesn't require making a roux (which would be helpful since there's a no dairy limitation).
