I need a veggie

To serve for Thanksgiving. I usually make brown sugar carrots but I want to do something different this year. Any ideas?

  • I'm doing cream-style corn.  But you could do a corn casserole.

    Here's Paula Deen's recipe Looks pretty easy. 

  • I did a cauliflower recipe last year that was a surprisingly big hit, I got it off the NY times website.... Now I need to see if I can find it. I also saw the Neely's do a garlic Kale recipe on the Nate Berkus show, it looked really good.

  • I only do green bean casserole but I once did a Food Network version that was healthier that was fresh green beans with those little tiny onion thingies...people liked it

    My aunt does a twice baked sweet potato with marshmallows on top that's good.

    Creamed corn is a good one

    I was about to post salad too. Thanksgiving is so "heavy" to me. I like to have a salad so I feel like I'm eating something fresh. Cranberries would be good- you could do craisins with feta and roasted pine nuts.

  • I third Brussles sprouts. I cut them in half and put them is a pan with butter, wait for it to start to brown, add a splash of water and cover it and let the water seep in. Add a touch of salt and pepper and another pat of butter and YUM!

    Also good is steamed green beans, sauteed in a touch of EVOO and garlic. Add toasted pine nuts and raisins and presto! It sounds odd, but it's a huge hit.

  • two other thoughts - steamed fresh asparagus or there's this awesome thing they sell at whole foods. they call them hericots verts which i think is just french for green beans. they mix them with blue cheese and maybe a little oil and i think there are some walnuts in there. it's a cold dish and very yummy. or you could do peas...
