Last night I was making pies for my Thanksgiving lunch at work, and the guy (B) I've been dating not so subtlety ask if I would make him one too since I was using his kitchen to bake the pies. I decided to bake him an apple pie since I've never made an apple pie before. My recipe called for Baking Apples which I decided meant Granny Smith apples. The directions said to bake the pie for 1 1/2 hours, but after an hour the pie was ready.
After letting pie cool we both ate a piece, and the apples were almost like applesauce. Has this happened to anyone else? Does anyone have any suggestions on a different apple to use that would stay to together better? It didn't seem to bother B to much as he said the pie tasted awesome, and he was going to eat it for breakfast.
Oh yeah I never did update y'all that I met someone on Halloween, we've hit it off really well! B's pretty great; he's one of those guys your friends tell you about that you never think you'll meet yourself. He's so freaking nice it's ridiculous, opens every door, will not let me pay for anything; even though I've tried. I've even told him about what happen to my xH, and he wasn't freaked out. I had to tell him because it will be a year since Rob passed next Monday. I think the difference with B is he's been married before, and his xW was a lot like Rob without the alcohol.

I usually use a mixture of granny smith and gala or granny smith and jonagold. Usually granny smith have a firm texture and hold up well to baking and pies.

I've used pretty much anything i had. I did make some baked apples this weekend with Granny Smith and I noticed that they just all the sudden got super soft, so maybe they weren't the best choice.
I normally use Red Delicious but I have no scientific/culinary reason why.

Last Thanksgiving my SIL mad a cranberry apple pie..she said she used Fuji apples from Whole Foods. I did not eat any but K said that it was really good..the apples did not turn to mush.

HEB has a sign over their apples that has one for Baking and one for Snacking. I only saw this for the first time this weekend when I picked up some Rome apples and wanted to know what their characteristics where. Thats when I found out the differences. Rome is a baking apple...
