Sweet Potato Casserole

Here is the recipe.  I swear it is awesome--I still have co-workers from 10 years ago ask for it.  I am not even that big of a fan of sweet potatoes, and I love it.  I am posting the original recipe and my variation of it--the original version is more like a dessert while my variation is more like a side dish (but still pretty sweet).  If ya'll make it, let me know how it turns out.

 60 oz can of sweet potatoes, drained (or 5 large
sweet potatoes)
2? cups butter, melted (divided use)
1 c sugar
2 eggs, beaten
1 tsp vanilla
1 c shredded coconut
1 c packed brown sugar
1 c pecans, chopped
2 tablespoons flour

Lightly rub a 9x13 in casserole dish with butter.
Preheat oven to 300 F.
In large mixing bowl, mash sweet potatoes. Add 1? cups melted butter, sugar, eggs and vanilla. Beat until smooth. Pour into prepared dish.

In medium bowl, mix coconut, brown sugar,
remaining melted butter, pecans and flour to make topping.
Spread over sweet potatoes and bake for 20-30 minutes or until topping is brown. Makes 12 servings.

Note: I have followed this recipe and everyone loves it. However, to make it a little less sweet I use 3/4 c of sugar and only 1 c of butter in the sweet potatoes and leave them a little chunky. Then I double the topping recipe. My family likes this version better because it is still very sweet, just more like potatoes and less like dessert. Either way, everyone loves it!

    I am still a softy for sweet potato cassarole with marshmallows, but this was unique and delish! THANKYOUUUUU!

  • My coworkers LOVED it, and two asked for the recipes and made it for their families for Thanksgiving.  I followed your variation, but used the whole doubled amount of the topping.  I made it the night before, and then cooked it that morning, and I found that there was too much butter on top of the topping after I baked it - I'm thinking it separated in the fridge.  But, it was still amazing, and I'm making it again this weekend for a family gathering!
