I'm so glad to be done with Thanksgiving leftovers. Don't get me wrong, it's my favorite day, but I can't even think of turkey right now.

Tonight we are having chicken tortilla soup (it's a chilly 70 degrees, so it's soup weather to me!!).
Sunday I made the both amazing pumpkin shrimp curry -- coconut milk, canned pumpkin, ginger, curry powder, cayenne, onions, garlic and shrimp. Having it for lunch today in about 5 minutes and SO EXCITED.

I think I starred that in my Google Reader the other day when she posted it. We are having shrimp alfredo with broccoli and mushrooms added in with whole wheat/whole grain spaghetti.

He says he's sick of turkey and no more until next year. Funny thing; I had a turkey casserole planned for yesterday. He ate it and liked it.
Tonight is simple night. Spaghetti and garlic bread. Amanda loves it when I do that for her.

We are having healthy taco salads (without the fried taco shell), instead I bought little tortilla strips to sprinkle on top and I'll brown some ground hamburger and add some tomatoes, salsa, black beans and cheese.
I'm eating all low carb since I started Metformin for my PCOS last week (carbs and Met do not play well), I've been eating a LOT healthier than I ever have and I'm definately feeling good about myself!

@Holly-LOL Ranch dressing on rice!? I love Ranch but never heard of it to go with Teriyaki chicken haha
I made a crockpot clam chowder yesterday which turned out pretty yummy and was really simple to make! It was not heavy at all either, I thought it should've been thicker but I guess the potatoes I used were the waxy yukon gold style instead of russets which are more starchy.
