What should we make for dinner?

The Artist is coming over tonight and we're going to make dinner.

This may seem like a really uneventful thing for most people, but I hate to cook, so we often eat out when we're together @ dinnertime, or else he makes one of a few things, like Swedish pancakes or fried rice. We need to branch out.

So... I would like suggestions for what we can make together tonight! Links to recipes get you extra points.

  • Depends on what you like... but i've become addicted to this dish called Chicken Ceasar Tetrazzini... you can google it most recipes are the same for it, it's not too complicated and doesn't take too long and it's amazingly delicious.
  • Easy meal or a little work?  easy would be nice, mostly because I'm lazy, and by the time he gets here and we get to cooking, it will probably already be on the later side.

    Allergies?  none, but my stomach is testy, so nothing too rich or creamy

  • I make a delicious stuffed chicken recipe that SO loves. I don't have a link because I kind of threw it together myself but it is pretty easy....

    Get some chicken breasts and cut a pocket into them to stuff.

    Dip them in egg, then in pankow bread crumbs 

    Mix in a bowl: Hidden valley ranch packet and a bar of cream cheese and bacon bits and use this to stuff the chicken  

    put in a pan with some hot oil, cover until cooked all the way through. YUM

    I also like the idea of making lasagna because it's so yummy and something you can do together.  The sauce is pretty easy.  I just brown ground turkey or ground beef with onion and garlic and then use a good quality sauce from a jar and then doctor it up with fresh herbs. 

    Then I use the no bake noodles or the fresh lasagna noodles from the deli section.

    You can either shred the cheese yourself or get it pre-shredded.  Assemble together and then seal the entire dish with foil and bake for an hour.  The steam will cook the noodles.

    You guys can have some good quality make-out time while the lasagna cooks and/or drink wine and relax.  Throw together a quick salad and you have dinner!

    Me too! And this recipe is so good and pretty easy too!

    Oh, this recipe is yum too! Love the lemon in it and how it plays off the cheese.

  • Ready to hear about the easiest, most delicious dinner ever? Broiled salmon, sauteed asparagus, and "baked" sweet potatoes. We usually get a .75lb filet and cut it in half for the two of us.

    Slice sweet potatoes horizontally. Microwave together for ten minutes or until tender throughout. Serve with butter and brown sugar.

    Sautee asparagus (fresh or canned) in pan with olive oil or butter on medium/low for 10-12 minutes, stirring occasionally. Salt and pepper to taste. 

    Put foil on a cookie sheet for easy clean up. Drizzle with olive oil. Take two pieces of salmon and rub both sides in the olive oil to coat. Season with salt and pepper to taste. Put under broiler for 12-15 minutes, or until salmon is opaque and flakes easily; edges may be slightly crispy. Serve with a drizzle of lemon (also good on the asparagus).
