Long shot... my cake pop recipe?

last year around this time I posted a direction for the cake pops I made - they were Andes Mint flavored.. anyway, I need to make them again, and I cant rememer how the hell I made them!  Nobody saved that post, did they (lol)? :)  I need my exact recipe because I had that damn thing perfected.

  • I swear to god, I'm not normally a baker, but these things were bomb.  I just used regular chocolate cake mix (devils food maybe?) but for the coating I melted a mixture of dark chocolate chips, mint chips, and Andes mints.  The only part I cant remember is I think I used a certain amount of frosting in the cake mix...

    So I used Chocolate Devils Food cake mix, and then let it cool for like 4 hours on the counter. 

    Then I mixed it all up with like 3/4 can of the creamy chocolate frosting, and rolled it into balls.

    I let the ballls set in the freezer overnight.

    For the coating I used 3/4 package of Tollhouse Dark Chocolate & Mint Chips, and a full package of the crushed Andes Mints. (I could only find both of these at Walmart).  I also put like a teaspoon of Crisco into the mix.

    Then take your sticks and dip them in the coating, and then stick them into the balls.  Then dip the balls in the coating, and kind of tap the stick on the side to get the excess off.

    I used those green floral arrangement thingies to stick my cake pops in so they could dry upright, and kept them in the fridge until they were ready to eat.

    You will love them, promise. :)

    But (and I'm sure this is a dumb question) - tell me about the baking part?  Do you bake the cake in a pan, let it cool, then bust it up and mix in the frosting and roll into balls? Sounds extremely messy. also, for the coating, did you melt over the stove?  I guess what I am saying, is that I need more of a recipe, with step-by-step instructions.  I'm a rule follower, you know.

  • That's why you need to blog!  I'm on a blog break, but I'm already regretting it, at least from the angle of blogging new recipes I try - then I can always search and go back to them and they're all in one place.

    Yes, bake it in a pan and let it cool there, THEN bust it up in a bowl and mix in the frosting.  The frosting part is slightly messy, but not too bad.

    I melted the coating over the stove, but I'm sure that's not what the professionals do.  Ashley, Tiff?

    1. Make the cake per the instructions.

    2. Let the cake cool in the pan, on the counter, for 4ish hours.

    3. Crumble the cake in a bowl, add 3/4 can of frosting.  Mix it up well.

    4. Form balls out of the mix.  Put them on a plate and freeze them overnight.

    5. Remove balls from freezer the next day.

    6. Melt the chocolate over the stove, and when it's melted stir in about a teaspoon of Crisco (this part is important!).

    7. Dip your sticks just barely into the chocolate.  Stick the sticks into your balls.

    8. Dip the balls in the chocolate mixture, tap on side of bowl to remove excess.

    9. Put your sticks in those foamy green things to cool.

    VOILA.  Better? :)

    Dude, I love you.  Also, this is my favorite line. I shall print and put in my recipe journal, as is.  Entitled "Amy's Minty Ballz".
