  • I'm making molasses cookies today ;-) They taste very similar to gingersnap cookies, but are soft and chewy. 

    3/4 cups shortening (in the UK, I use Trex)

    1 Cup sugar

    1/4 cup molasses (or treacle)  

    1 egg

    1 tsp cinnamon

    2 tsp baking soda

    2 cups flour

    1/2 tsp ginger, 1/2 tsp ground cloves (or you can put in 1 tsp all spice instead)

    1/2 tsp salt

     

    Melt shortening on low heat on the stove. Remove and let cool. Add sugar, molasses and egg. Beat well. Mix together dry ingredients separately.  Add mixtures together. Mix well. Chill. Form 1 inch balls. Roll in granulated sugar and place on greased cookie sheet. Bake at 375 F for 8-10 minutes. I think I usually bake closer to 6-8 minutes so they are a little softer.

  • I'm out of town right now so I don't have the recipe with me, but I always love to make Oreo Truffles. Basically you blend double stuffed Oreos with cream cheese and some other ingredients (cant' remember off the top of my head) and let them harden. Then you dip them in melted white chocolate. To make it more festive, I've sprinkled them with crushed candy canes or drizzled them with colored chocolate. They are SOOOOO yummy.
